Enhancement of the water solubility and antioxidant activity of hesperidin by chitooligosaccharide

Abstract: The preparation conditions of Hesp-COS in this study were efficient and produced an increment in both the water solubility and antioxidant activity of hesperidin. © 2017 Society of Chemical Industry.
