Sour orange (Citrus aurantium L.), which belongs to the Rutaceae family, is used around the Mediterranean Sea for ornamental and agronomic purposes as a rootstock for the Citrus species. Peels and flowers, the most-used parts of Citrus aurantium L., have constituted a largely promising area of research for their many medicinal properties. However, the leaves of sour orange have not yet been studied extensively. The present study aimed at investigating the essential oil composition of sour orange leaves grown in Algeria and determining their antioxidant and anti-inflammatory properties. Essential oil composition of leaves harvested before flowering was determined by GC-MS. Total phenol content, antioxidant activities (DPPH) and elastase and collagenase inhibition were assessed. Forty-three volatile compounds were detected in essential oil from leaves with a yield of 0.57%. The major compounds were linalool, linalyl acetate and α-Terpineol. Results show that the total phenol content and antioxidant activity of essential oil are low, 3.48 ± 0.10 mg/g (Gallic Acid Equivalent/EO) and IC50 > 10,000 mg·L−1, respectively. In contrast, EO present an interesting level of elastase and collagenase inhibition. This result emphasizes the potential interest of the essential oil of sour orange mainly in relation to its anti-aging mechanism.

This study evaluates the combined efficiency of whey protein isolate (WPI) with maltodextrin (MD) and gum arabic (GA), as a delivery system for encapsulating Citrus reticulata essential oil (CEO). The wall materials blended at different rates were produced to obtain seven formulations of nanocapsules (NCEO), namely NCEO-GA, NCEO-MD, NCEO-WPI, NCEO-GA/MD, NCEO-GA/WPI, NCEO-MD/WPI, and NCEO-GA/MD/WPI. The interaction between CEO and WPI was simulated by molecular docking. Findings showed that the physicochemical characteristics and storage stability of formulations containing WPI were considerably improved. The NCEO-GA/MD/WPI formulation demonstrated the optimum values of encapsulation efficiency (92.08%), highest glass transition temperature (79.11 °C), high crystallinity (45.58%), high thermal stability (mass loss at 100 °C < 5%), and also had the highest antioxidant activity and lowest peroxide value after storage. This study demonstrated that combining WPI with MD and GA, as wall material encapsulation, can produce nanocapsules with superior properties to those created using polysaccharides individually.

Essential oils are formed by a complex matrix of substances that are biosynthesized in the secondary metabolism of plants. Nowadays, different ecofriendly extraction techniques (e.g., ultrasound-, microwave-, enzyme-assisted extraction, and supercritical fluid by CO2, etc.) have been adopted to obtain essential oils. These techniques provide unique quality of essentials oils or extracts from aromatic plants in a short time with high energy savings. Essential oils not only impart aroma, but also possess antimicrobial and antioxidant activities. Health limitations in the use of synthetic additives have drawn researchers’ attention towards essential oils as safe natural preservatives. Therefore, this chapter summarizes novel technologies to recover essential oils or extracts. In addition, it focuses on application of essential oils and their constituents as green preservatives to retard microbial growth and oxidative spoilage.
