The aim of the research is to investigate the efficiency of producing blanched apple chips utilizing an innovative technology, namely sublimation drying. Apples of the “Aport Almaty” variety were stored at a temperature of 4°C prior to processing. They were peeled, seeded, sliced into segments of specific thickness, and subjected to drying in a drying chamber at temperatures of 45, 50, and 60°C. Following drying, the samples were analyzed for antioxidant content, phenolics, minerals, and vitamins. For comparative analysis, methods such as sublimation drying, conventional drying, and low‐temperature drying were also employed. Atomic absorption spectroscopy and high‐performance liquid chromatography methods are employed for the analysis of the mineral and vitamin composition. Each group consists of 30 samples. Analysis of variance revealed statistically significant differences in antioxidants (F(3, 116) = 12.48, p < .001), water activity (F(3, 116) = 7.22, p < .01), and phenols (F(3, 116) = 9.85, p < .001) among the drying methods. Sublimation drying demonstrated higher levels of antioxidants and phenols (p < .05). At 45°C, sublimation drying resulted in higher levels of antioxidants (p < .05) and vitamin C, as well as low water activity (p < .05). Dry mass significantly correlated with storage stability (r = −0.75, p < .05). Sublimation drying exhibited superiority in moisture loss (F > 24.17, p < .001). The correlation coefficient between dry mass and moisture content was −0.82 (p < .01). Blanching improved antioxidant activity (75% vs. 65%) and color preservation.Practical applicationsOur study deepened the understanding of sublimation drying processes in apple chip production by determining optimal conditions for achieving high product quality. The obtained results provide valuable recommendations for practical application in the food industry, including optimal temperature regimes and the use of blanching to enhance chip quality. The universality of our study results supports their applicability in various sectors of the food industry that involve the drying of fruits and vegetables. Sublimation drying with blanching demonstrated high effectiveness in preserving the biochemical characteristics of the product, extending shelf life, and enhancing organoleptic properties.

Soybean is a high-protein and at the same time an oilseed crop. Its cultivation brings profit from the sale of seeds and enriches the soil through the activity of nitrogen-fixing plants. The effectiveness of pre-sowing treatment of soybean seeds with a nitrogen-fixing preparation (HiStick© inoculant) in combination with molybdenum and cobalt salts was evaluated at field level from 2019 to 2021 in the conditions of south-east Kazakhstan. The profitability of the crop could be increased by the use of pre-sowing treatment with these micronutrients which are involved in the processes of photosynthesis and nitrogen fixation. The most indicative characteristics for assessing the impact of pre-sowing seed treatment are the accumulation of protein and oil per hectare, since grain yield increased with pre-sowing treatment without changing quality characteristics (expressed as concentrations). Our research showed an increase in protein yield per hectare with pre-sowing treatment. When seeds of the early ripening Ivushka variety were treated with molybdenum and cobalt without HiStick©, protein yield per hectare increased by 8%. When using the HiStick© preparation together with microelements, the protein yield increased by 4.8%, 8.7% and 12.8% for Zhansaya, Lastochka (late-maturing) and Birlik CV varieties respectively. The increase in oil yield after pre-sowing seed treatment for the early-ripening Ivushka variety was 8.8% (complete treatment) and 6.8% for the late-ripening Lastochka variety (with micronutrients only). Therefore the increase of grain protein and oil yields improves the profitability of this crop for a range of soybean varieties.

Background and Aim: The use of antibiotics is prohibited in poultry feeding in many countries worldwide, which has resulted in the emergence of antibiotic-resistant bacteria. Therefore, probiotic supplements are a good alternative in these circumstances. Probiotics, including Bifidobacterium adolescentis and Lactobacillus acidophilus, can reduce the development of resistance and stimulate the growth of broiler ducklings. This study aimed to evaluate properties of the probiotic supplement containing these bacteria. Materials and Methods: We studied the response of broiler ducklings to the addition of a dietary probiotic supplement containing lactobacilli and bifidobacteria until they reached 7 weeks of age. All birds participating in the experiment received probiotic supplements on days 1-7, 15-21, 29-35. The state of the ducklings was assessed on day 21. At the age of 21 and 42 days, 4-5 ml of blood was drawn from the wing vein of 10 randomly selected birds (5 in each group). Blood samples were analyzed for total protein, concentration of glucose, hemoglobin, calcium and inorganic phosphorus, as well as the number of erythrocytes and leukocytes. Enzymatic calorimetric method, molybdate method, and haemocytometry according to Nutt method and haemoglobin cyanide method were used to analyze blood samples. Results: The live weight of the experimental ducklings increased by 5.0%, showing a positive effect of probiotic supplementation, whereas their feed consumption per kilogram of weight gain decreased. Their hemoglobin content and red blood cell count increased. Although the number of lactobacilli and bifidobacteria increased, the number of Escherichia coli cells decreased 2.15-fold (p<0.05). The addition of the probiotic supplement contributed to improving the digestibility of protein and fat by 1.6%, fiber by 3.4%, and nitrogen-free extractive substances by 4.7%. The broiler ducklings had high meat quality indicators, including dressing percentage, which increased by 5.4%, whereas the fat content decreased by 1.3%. Conclusion: The introduction of the probiotic supplement in the diet of broiler ducklings improved their growth indicators and increased the number of lactobacilli and bifidobacteria while decreasing the number of E. coli cells in the intestine. It not only improved the meat quality but also increased the profit from $0.392 per bird in the control group to $0.472 per bird in the experimental group. Therefore, this probiotic supplement is a good alternative for raising ducklings in large enterprises and farms. The study limitations may be that the results are only applicable to broiler ducklings. The use of lactobacilli may yield different results in other bird breeds or broiler ducklings in different age groups.
