Efficacy of Food Safety Training in Commercial Food Service

Abstract: Proper food safety training is essential to decrease incidences and overall rates of foodborne illnesses and outbreaks. Though many commercial restaurants should provide proper food safety training to food handler employees, this training is not always offered or effective. Here, we summarize the results of a primary literature study concerning the effectiveness of food safety training in commercial settings. “…The proactive FS-culture remained six months later (t = 2) after the local manager performed the refreshments of the educational actions. The refreshment of the educational actions plays an essential role in changing behaviour and retention of skills (McFarland et al, 2019). The educational actions in the current study were behaviour-based as proposed by other studies (McFarland et al, 2019;Yu et al, 2018).…”

“…Many researchers proposed training as the primary measure to reduce the risk of foodborne diseases (McFarland, Checinska Sielaff, Rasco, & Smith, 2019;Yu, Sirsat, & Neal, 2019). The type, style, and techniques of training play an important role in the development of appropriate behaviours (Medeiros, Cavalli, Salay, & Proença, 2011;Young, Waddell, Wilhelm, & Greig, 2020;Yu, Neal, Dawson, & Madera, 2018;Zanin, Da Cunha, De Rosso, Capriles, & Stedefeldt, 2017).…”

“…Emotion is an important element in education because it drives attention, learning, and memory (101). For food safety training, education, and messaging, targeting the emotional side of food handlers may be more successful than formal training (68). Triggering an emotional response in food safety risk communication may shape risk perceptions and motivate people toward behavior changes.…”
