Effects of some environmental factors on somatic cell count and milk chemical composition in cow bulk tank milk

This study determined the antibiotic resistance of the dominant bacteria in the 85 farm BTMs according to the guidelines recommended by the epidemiological cutoff values in the EUCAST. In addition, some physicochemical and microbiological properties of farm BTMs were investigated. The milk samples were divided into two groups according to their SCC values. The milk samples with higher SCC than 400,000 cells mL−1 were further examined bacteriologically, and the antibiotic resistance of isolates was determined. The average TAMB value was 6.34 log CFU/mL in farm BTM. It was found that high‐SCC values did not affect other physicochemical properties of BTM samples, such as fat, protein and total solids, except for lactose content. Seventy‐two strains were isolated from 45 bulk milk samples. The most prevalent bacteria were Enterococcus spp. (23.61%). The other isolates were Citrobacter spp. (12.5%), Staphylococcus spp. (12.51%), Serratia spp. (11.12%), Klebsiella spp. (9.72%), Bacillus spp. (9.72%), and Enterobacter spp. (8.33%). In antibiotic resistance analysis, 52.6% of Enterobacterales isolates showed cefoxitin resistance, and nine Enterobacterales isolates were determined as the presumptive ESBL producers. None of them was confirmed as ESBL producers. Moreover, MDR was detected in 83.3% of Enterobacter spp. isolates and all Bacillus spp. isolates. The over and inappropriate use of antibiotics in mastitis treatment may cause antibiotic‐resistant microorganisms in milk. It was found that 52.7% of the isolated bacteria were MDR, which could pose a risk to public health and food safety, with the consumer's increasing interest in consuming raw milk.

Subclinical mastitis is a very important disease for dairy cattle farms. As a result of the deterioration of milk quality, it causes economic losses in enterprises. Milk samples of 180 cows were divided into five groups according to the somatic cell count. Some chemical properties and composition were measured in milk samples. The ratio of solid-non-fat, mineral matter, lactose, and protein decreased as the somatic cell count of the milk increased (P˂0.05). No statistical difference was observed between the fat content of milk and the level of somatic cell count (P˃0.05). Although specific gravity decreases (P˂0.05), the electrical conductivity increases (P˂0.001) in milk with high levels of somatic cell count. The milk quality of dairy cattle deteriorates due to the high somatic cell count. Therefore, regular monitoring of somatic cell count is recommended in dairy farms to monitor changes in fat, protein, solid-non-fat, lactose, and mineral matter ratios as well as some chemical properties that make up the milk composition.

The most important goal of the production of quality dairy products is to extend the storage period of the product within the scope of food safety and security while maintainig the sensory quality criteria such as taste and aroma. There are many factors that determine the shelf life of milk and dairy products and the development of their taste and aroma. Among these factors, those associated with milk; milk composition are raw milk quality parameters such as total viable bacteria and somatic cell count. In this context, the effects of different barn floor types and manure disposal systems on raw milk quality parameters were examined in this study. Average sometic cell count of the concrete floor / grid system, rubber bed floor / scraper system and concrete floor / scraper system were determined as respectively 720.10 3 cells/ml; 397.10 3 cells/ml; 376.10 3 cells/ml, and total viable bacteria numbers were determined as respectively 135. 10 3 cfu / ml; 80.10 3 cfu / ml and 88.10 3 cfu / ml.
