Abstract: ABSTRAK Brokoli (Brassica oleracea var. italica) merupakan salah satu tanaman yang memiliki nilai ekonomi tinggi, kaya nutrisi dan vitamin, serta mengandung senyawa glucoraphanin yang memiliki khasiat antikanker.
