Effective valorization of food wastes and by‐products through pulsed electric field: A systematic review

Abstract: Utilize food waste and by‐products generated from food processing is a developing concern to upgrade economic performance and ensure environmental sustainability. The compounds recovered from the food wastes could have the potential to be employed in different food and biotechnological applications. As a substitute to the conventional method such as Soxhlet extraction, liquid–liquid extraction, and mechanical shaking, the development of green extraction techniques (microwave, ultrasound, and pulsed electric fi… Show more

“…Under the effect of PEF, the cell membrane is electrically pierced, losing its permeability in a reversible or irreversible manner depending on the electrical parameters, the cell characteristics (size, age, and shape), and the pulsing media composition [65]. These features have made PEF into an extensive technology for microorganisms' inactivation, recovering high-value compounds, like proteins and polyphenols, and improving freezing and drying processes [66]. In HVED technology, a current of high-voltage electrical discharge is applied between two electrodes forming a plasma channel where energy is then presented directly in a liquid.…”
