Carcass composition in reindeer is affected by feed intake and the age and sex of the animal. Studies have also shown that age, sex, carcass trim fat content and total intramuscular fat content (IMF) influence lipid class composition. The aim of this study was to compare lipid class composition and IMF in relation to carcass weight, conformation and trim fat content, and to investigate how these parameters are affected by age, sex and different feed sources. Five groups of reindeer were studied. Two groups of calves were fed two grain-based pelleted feeds with different lipid compositions for approximately two months before slaughter. One of these groups was fed with conventional pellets, and the other with pellets enriched with linseed cake to increase the amount of n-3 fatty acids in the diet. Three groups of grazing reindeer were also included in the study, consisting of adult males, adult females or calves. Reindeer calves fed pellets had higher slaughter weights, higher trim fat content and better carcass conformation scores compared to the grazing calves. However, there was no significant difference in IMF between pellet-fed and grazing calves. Adult female reindeer had the highest and grazing calves the lowest slaughter weights, trim fat and IMF. There was no difference in lipid class composition in meat from calves fed with the two pelleted feeds, whereas grazing calves had a higher amount of phospholipids. Squalene was identified and quantified as a component of intramuscular lipids in reindeer meat.

Amaranth can be considered a very interesting crop for the Mediterranean region, thanks to its inherent tolerance to disadvantageous growing conditions, along with the high nutritional and nutraceutical value of its seeds. The study aims to evaluate the seed yield, and the oil content and quality of two amaranth genotypes (species Amaranthus hypochondriacus L. and Amaranthus cruentus L., respectively) grown in central Italy, testing two types of soil (loamy and sandy soil). The two species showed a good performance in the tested environment, with satisfactory seed yield and relative short growth cycle. Significant differences between the two genotypes were observed in terms of seed yield. The crude oil content ranged from 7.5% to 6.0%, with linoleic, palmitic and oleic acids as the major fatty acids of the oil in both genotypes. The unsaponifiable fraction was rich in sterols (campesterol, stigmasterol and β-sitosterol), and interesting levels of squalene were found. This study demonstrated the unique nutraceutical properties of the seeds of two genotypes of A. hypochondriacus and A. cruentus, grown in central Italy environment, as a source of polyunsaturated fatty acid and squalene. These characteristics make amaranth a valuable alternative crop for specialty oil production in the Mediterranean region.

Abstract. Perilla frutescens, which comprises var. frutescens and var. crispa, has been cultivated traditionally in Asian countries as an edible oil, leaf vegetable, and medicinal crop. To evaluate the lipophilic phytonutrient properties of P. frutescens, we selected 54 Perilla accessions [19 landraces of var. frutescens (FL), 22 weedy type var. frutescens (FW), 9 weedy type var. crispa (CW), 2 cultivars of var. frutescens widely cultivated for seed oil (FCS), and 2 cultivars of var. frutescens cultivated as a leaf vegetable (FCL)] and analyzed their seeds and leaves for vitamin E, squalene, and phytosterols. Among the four vitamin E isomers analyzed, γ-tocopherol was the major form of vitamin E in seeds, whereas α-tocopherol was the major form in leaves of all types of P. frutescens. The highest total vitamin E content in seeds was present in FL (170.0 mg･kg ), respectively. Among the three phytosterols, β -sitosterol occurred in the highest amount in both leaves and seeds of all of the crop types. Phytonutrient contents were comparatively higher in leaves than in seeds of all crop types. All of these results suggest that the consumption of leaves and seeds of Perilla crops could be beneficial to human health, as Perilla possesses considerable amounts of various lipophilic compounds.
