Abstract: Lactoperoxidase enzyme (LP) is a natural component in milk with broad spectrum of antimicrobial activity applications in in vivo and in vitro. LP system (LPS) was developed to eliminate the growth of bacterial pathogens and augment the shelf life of raw milk.
