Effect of heat stress on carcass and meat quality of indigenous sheep of Bangladesh

Abstract: The research was conducted to study the effect of heat stress on carcass characteristics and meat quality in indigenous sheep. Nine sheep were divided into three groups which were almost similar in age, sex and weight. Three groups were divided as zero hour (T0), four hours (T4) and eight hours (T8) heat exposure to direct sunlight. During experimental period temperature–humidity index (THI) value was calculated as 27.09 which indicated T4 and T8 groups were subjected to heat stress condition for at least four… Show more

“…The higher ultimate pH and shear force of meat from heat stressed goats increased cooking loss, reduced water holding capacity, and increased toughness [27]. Reduced weight of edible (liver, blood, heart, intestine) and inedible (skin, feet) components have also been noted in heat-stressed sheep and goats [27,28].…”

“…Relatively less attention has been afforded to nonstaple crops such as legumes, fruits, and vegetables. Assessments of extreme heat effects on livestock have focused on historical reductions in dairy and meat production [153,154] and increased livestock mortality [155][156][157][158] during heat events.…”

“…Even almost all linear carcass measurements also remained intact between the KC and KHS groups except shoulder circumference. However, varied results were obtained for the effect of heat stress on linear carcass measurements in sheep and goat ( Rana et al, 2014 , Archana et al, 2018 ).…”
