Effect of Ethyl Oleate Pretreatment on Drying of Ginger: Characteristics and Mathematical Modelling

Abstract: Ginger is of high value and export oriented commodity crop, which plays an important role in agricultural sector. Proper drying techniques are required to capitalize this crop. In the present study, the effect of chemical pretreatment of alkaline ethyl oleate on drying behaviour of ginger was investigated and compared with untreated ginger at selected temperatures of 45, 55, and 65°C at a constant air velocity of 1.8 m/s. The drying rate curves showed that drying occurred in falling rate period and the drying … Show more

“…However, the moisture removing rate is also dependent on the ease of heat transfer. Forced convection drying system has been reported to be best suitable for faster drying as the value of the coefficient of convective heat transfer associated with them is more than the natural convection drying (Azharul Karim & Hawlader, 2005;Deshmukh et al, 2013Deshmukh et al, , 2014. From Figure 4, it has been observed that the values of convective heat transfer coefficient decrease with the progression of drying months, that is, June, July, and August 2016.…”

“…These beneficial health effects are ascribed to the presence of volatile oils, gingerols, shogaols, and high antioxidant compounds (Jelled et al., ; Park & Jung, ). It is used in various ways such as fresh ginger, bleached dried ginger, ginger powder, brined ginger, ginger oil, and dried ginger (Deshmukh, Varma, Yoo, & Wasewar, ). It is also employed as a raw material for the cosmetic, pharmaceutical, and the food industries in the production of perfume, toiletries, shampoo, hair conditioner, baking products, meat products, wine, and other medicinal products due to its high antioxidant properties (Wang et al., ).…”
