Effect of dynamic high‐pressure microfluidization on the physicochemical and structural properties of insoluble dietary fiber from fresh corn bract

Abstract: Fresh corn mainly refers to fruit-type corn such as sweet corn and glutinous corn, which is harvested at the milk stage of kernel maturity. It is favored very much by consumers because of its sweet and delicious flavor, unique flavor, and rich nutrition. The annual planting area of fresh corn in China is more than 1.34 million hm 2 , and it is currently the world's largest producer and consumer of fresh corn (Xu et al., 2020). The bracts are the outer covering part of the corn ears, which play an important rol… Show more

“…For swelling capacity, 1 g (0.25emM0) of IDF was taken in a 25 ml measuring cylinder, and the volume of dietary fiber before swelling was recorded (V0). Following this, 15 ml of distilled water was added to completely immerse the sample; the mixture was soaked for 24 h and recorded the volume after swelling (V1) (Geng et al, 2021):SC0.25em)(ml/normalggoodbreak=V1V0M0goodbreak×100%where, V0 represents volume of sample before water absorption (ml), V1 represents volume of sample after water absorption (ml), and M 0 represents sample weight (g).…”

“…Currently, several methods are available for the extraction and modification of IDF, such as physical, chemical, enzymatic, as well as a combination of these methods (Geng et al., 2021; Qi et al., 2016; Xiao et al., 2022; Yang et al., 2019; Zhang et al., 2021). However, among all the methods, enzymatic extraction has attracted much attention due to its high purity, mild extraction conditions, and less environmental impact (Maphosa & Jideani, 2015).…”
