The aerial parts of Lavandula angustifolia Mill., were collected from Iran at the full-flowering stage and dried by three different drying methods (sun-drying, shade-drying and oven-drying at 45°C). The essential oils were extracted by hydro-distillation method with two different times of extraction (1 and 3 hours) and analyzed using GC and GC/MS. Although extraction time has no significant effect on the essential oil composition, the drying methods yielded significant effects. Forty components were detected in the oil of L. angustifolia under different drying methods, including, 1,8-cineole (29.0-38.0 %), linalool (6.8-19.2 %), camphor (9.6-14.6 %), borneol (8.4-15.2 %) and β-phellandrene (4.0-7.0 %), as main components.

Herbs are usually marketed as dry due to a consumer demand beyond their seasonality; dehydration leads to a stable, easily moveable product that is available throughout the year. The process of drying, though, leads to modifications in the appearance, composition and quality of the raw material. The extent of these alterations depends on the applied drying methodology and its parameters, rendering the optimization of this process imperative. Numerous studies examining the effect of drying on the main characteristics of herbs have been published in recent years, and this review aims at organizing the available information of the studied herbs, drying methods and measured parameters in a comprehensive manner. Primarily, since aroma is the main characteristic of herbs and the principal aim for the end product is to retain the raw material's character, this review will focus on the most widely studied effect of drying, which is the essential oil yield and composition. Secondly, results from various studies on the influence of drying on biochemical compounds, organoleptic properties of dried herbs are also presented. The most common approach to the study of drying kinetics is also presented. Finally, novel technologies targeting to minimize the magnitude of changes from the raw material are described.

Bu çalışmada güneş enerjisi ile reyhan kurutma sistemi tasarlanmış ve imalatı gerçekleştirilerek mor reyhan bitkisi kurutma deneyleri yapılmıştır. Deneyler üç grup şeklinde gerçekleştirilmiştir. Birinci grup deneylerde reyhanlar kurutma kabinine konmuş ve sıcaklıklar 45ºC, 50ºC, 55ºC 'ye ulaştığında sabit tutulmuş ve birer saat aralıklarla kütle ölçümleri gerçekleştirilmiştir. İkinci grup deneylerde kurutma makinesinde sıcaklık 45ºC, 50ºC, 55ºC, 60ºC 'ye ulaştığında sabit tutularak reyhanlar kurutma makinesinin içerisine konmuş ve kuruma gerçekleştirilmiştir. Üçüncü grup deneylerde farklı başlangıç kütlesine sahip reyhanlar kurutma kabinine konularak kurumaları sağlanmıştır. Kuruma süreleri 3 ile 7 saat arasında olmuştur. Kurutma işlemlerinin tamamlanmasının ardından kurutulan ürünlerin su aktivitesi ve renk analizi deneyleri yapılmıştır. Kurutulmuş reyhanın nihai nem içeriği %15'in altına düşürülmüştür. Su aktivite değerleri literatürde belirtilen 0,6 değerinin altında bulunmuş ve mikrobiyal büyüme açısından güvenli kabul edilebileceği sonucuna varılmıştır. Farklı sıcaklıklarda yapılan deneylerde kuruma süreleri beklendiği gibi bulunmuştur. Renk analizi deneyleri yapılmıştır. Analizler sonucunda imalatı gerçekleştirilen bu sistemin başarılı bir şekilde reyhanın kurutulmasına olanak sağladığı görülmüştür.
