As a result of the growing population of Indonesia from year to year will affect the security of national food stocks. Demand for various types of foodstuffs will continue to increase, including beef. The growth of beef consumption per capita of Indonesian society tends to increase. During the last five years (2013)(2014)(2015)(2016)(2017) the national beef cattle population shows positive growth, continuing to increase by an average of 1.54% per year. The growth of large-scale cattle farms has an impact on increasing the amount of livestock waste. The challenge of developing livestock sub-sector is to increase meat production and reduce the risk to the environment. Various kinds of waste management can be applied to livestock business before being released into the environment. Conventional end-of-pipe treatment strategies are being shifted to more profitable strategies. The processing of cattle dung manure into organic fertilizer through composting technology becomes one of the favorable alternatives. Composting is an effective method of recycling abundant livestock wastes into products that are stable, sterile, and agriculturally useful. Some technological advances in composting are essential to be applied in compensating for the production rate of cattle manure.

This paper presents the possibillity of using native microoganisms from the brewery’s post-treatment sludge in order to create fertilizers by the windrow composting. The result showed that there are 3 representive useful microoganisms in the following: C1, C4 and C6. At the same time, the change in the composition of supplementary fiber into 4 treatment has resulted in the following : the everage C/N ratio of treatment are from 20 to 29, the average pH of the ratios is 7,82; total nitrogen fixation average is 2108; the highest is 5108; the smallest is 8107, microoganisms which are capable of decomposing cellulose average is 7 x 106; the highest is 9106, the lowest is 5106. Total Salmonella and E. coli are 0; the after-testing products meet the standard in the Viet Nam Bank for Agriculture and Rural Development.

Composting is a potential alternative for cephalosporin C fermentation dregs (CCFDs) compared with incineration process or landfill because of its advantage of recovering nutrients. In this research, CCFDs and activated sludge (AS) were co-composted to analyze the feasibility of recycling the nutrients in CCFDs. A pilot-scale aerobic composting system with an auto-control system was used in this research, and the maturity and security of the compost product were evaluated. The temperature of the composting mixtures was maintained above 55°C for more than 3 days during the composting, indicating that co-composting of CCFDs and AS could reach the compost maturity standard, and the seeds germination index (GI) increased from 17.61% to 68.93% by the end of the composting process (28 days). However, the degradation rate of cephalosporin C (CPC) was only 6.58% during the composting process. Monitoring the quality of antibiotic resistance genes (ARGs) in the composts showed that the log copy of blaTEM in the composts increased from 2.15 in the initial phase to 6.37 after 28 days. Long-term investigation of CPC degradation and ARGs variation was conducted for the composts; CPC could still be detected after the maturity phases. A removal efficiency of 49.10% could be achieved in 110 days, while the log copy of ARGs increased to 7.93. Although a higher GI value (>80.00%) was observed, the risk of recycling the CCFDs compost product into land is still high.
