Effect of a combined microwave-assisted drying and air drying on improving active nutraceutical compounds, flavor quality, and antioxidant properties of Camellia sinensis L. (cv. Longjing 43) flowers

Abstract: Drying tea flowers into a high quality product is important to its commodity value. In the present work, a combination of microwave assisted drying and air drying (MAD-AD) were applied in fresh tea flowers processing and its effect on flavor quality, active nutraceutical compounds, and antioxidant capacities were studied. The results showed that compared to air drying (AD) and freeze drying (FD) tea flowers, the MAD-AD tea flowers had higher contents of active compounds such as catechins, flavonol glycosides, … Show more

“…Curing in agricultural industries often refers to the maturation of the chemical profile of a biological material over long periods of time to obtain optimum quality and flavor. This usually involves unique iterations of methods [ 104 , 116 , 117 , 118 , 119 , 120 ]. For the cannabis industry, curing involves essentially marking the end of a drying process and the beginning of the storage process, where the cannabis inflorescence is being maintained at an ideal moisture content and water activity.…”

“…Nutraceutical beverages can be an important part of the human diet since they can contain key bioactive chemicals, commonly found in the form of pills, capsules, liquids, and other medications [14], that can help treat and prevent chronic illness [15], as well as providing needed hydration. However, the taste and flavor quality of such beverages is the most important factor for adoption [16]. As a result, the formulation of high-quality beverages with good flavor, scent, and shelf-life stability is critical for achieving the appropriate levels of consumption required for health promotion [17] and disease prevention, as well as contributing to the treatment and prevention of chronic diseases [18,19].…”

“…EGCG is the most abundant catechu in tea plant flowers. Tea flowers can also be used as a source of hypocaffeine because of their low content of caffeine [ 16 ]. In a comparison with other tea species ( C. japonica , C. tenuifolia , 2 savoury Camellias , and C. synaptica ), EGCE and EGC were only detected in tea flower ( Camellia sinensis ) [ 17 ].…”
