Abstract:Coconut is naturally sealed with coconut water inside. Microbial contamination occurs only after the seal is broken during extraction. This study evaluated changes in the microbiological, physicochemical, and chemical properties of coconut water during postharvest storage at ambient and refrigerated temperatures.
