The European Union (EU), within the renewal plan of the Common Fisheries Policy and the Common\ud Market Organization, with the Cape IV of Reg. (EU) n. 1379/2013 have introduced new requirements for\ud the labelling of fisheries and aquaculture products. These, as well as providing consumers with more\ud complete information, integrate the provisions of Reg. (EU) n. 1169/2011 and acts as a tool to prevent\ud frauds and illegal fishing. In this work the new seafood labelling provisions were evaluated, starting from\ud the analysis of the art. 35 of the Chapter IV and comparing it with the previous EU dispositions (Reg. (EC)\ud no. 104/2000 and no. 2065/2001). The exclusion of prepared and processed products and aquatic invertebrates\ud from the application of the mandatory seafood labelling provisions and the role of the mass\ud caterer operators with respect to the labelling requirements were identified as the two major shortcomings\ud that still need to be better addressed by the legislator. Overall, what emerged from this work is\ud that, if on the one hand the European legislation on seafood labelling has achieved important goals,\ud evolving and improving itself, on the other it is still controversial and plagued by the same problems as\ud 15 years ago. Several factors appear to contribute to this growing phenomenon, including economical gain, increasing diversity of products, complexity of international food trading networks, deficiencies in traceability systems for ethnic foodstuffs, as well as lack of effective methods to identify meat sources, particularly in thermally processed products (Rahmati, Julkapli, Yehye, & Basirun, 2016;Armani et al, 2015;Ercsey-Ravasz, Toroczkai, Lakner, & Baranyi, 2012). A gold nanoparticle (AuNP) probe strategy for testing meat authenticity was developed, which relies on the colorimetric differentiation of a particular DNA sequence, due to the differential aggregation profiles exhibited by the AuNPs in the presence or absence of specific target hybridization. Gold nanoparticles were conjugated with thiolated oligonucleotides for specifically identifying a 69 bp fragment of the horse cytochrome b gene. In the presence of a complementary target preventing aggregation of the AuNPs when acid was added, the reaction mixtures retained the original pink colouration of the colloidal particles, whereas they turned purple in the opposite event. Fresh meatballs, prepared using pure bovine meat, were used as blanks, producing a purplish coloured solution with a peak at ≥570nm. Horse meat was used as positive control and the pink colour obtained after hybridization exhibited maximum absorption at 524 nm. Both the specificity and sensitivity of the tests performed were 100%. Visual observations and spectroscopic data indicated that the coloration produced by the AuNPs (positive-pink, negative-purple) was very stable, showing no change under normal laboratory conditions. The use of AuNPs for the colorimetric detection of DNA targets from undeclared species in meat products provides an inexpensive and easy-to-perform alternative to common molecular assays. The technology described here can be further developed to accommodate detection of many cases of adulteration and fraudulent practices.

This phenomenon has huge economic impact and sometimes even public health implications.D NA barcoding represents aw ell-proven molecular approach to assess the authenticity of food items,a lthough its use is hampered by analytical constraints and timeframes that are often prohibitive for the food market. To address such issues,w eh ave introduced an ew technology,n amed Nano-Tracer,t hat allows for rapid and naked-eye molecular traceability of any food and requires limited instrumentation and cost-effective reagents.M oreover,u nlike sequencing,t his method can be used to identify not only the substitution of afine ingredient, but also its dilution with cheaper ones.
