ResumenEl presente estudio tuvo por objeto evaluar el efecto de la suplementación de fitasa sobre la digestibilidad del fósforo y la proteína del gluten de maíz (GM), harina de trigo duro (HTD) y soya integral cruda (SI) en dietas para tilapia roja, Oreochromis sp. Para calcular los coeficientes se utilizó el método indirecto con marcador de óxido de cromo III, recolectando las heces por el sistema Guelph modificado. Se seleccionaron juveniles de Tilapia roja, Oreochromis sp., con un peso promedio de 100 g. Las raciones estaban constituidas por dieta referencia (DR) (69.5%), 0.5% de marcador inerte (óxido de cromo III), el ingrediente a evaluar (30%) y para cada uno de ellos, fitasa en niveles de 0.0, 500 y 1000 Unidades de fitasa (UDF)/kg dieta. Los coeficientes de digestibilidad aparente (CDA) de la proteína obtenidos fueron: sin inclusión de fitasa 94.7, 84.5 y 90.3%, con 500 UDF 95.1, 84.1 y 89.3% y con 1000 UDF 97.6, 90.8 y 92.9% para GM, HTD y SI respectivamente; en cuanto a CDA del fósforo los resultados para GM variaron entre 30.7% y 69.8%, para HTD entre 46.6% y 51.1% y entre 44.0% y 54.7% para SI. Los CDA de la proteína y fósforo de la soya integral y del trigo duro no fueron afectados significativamente por el nivel de adición de la fitasa (P>0.05); sin embargo, los CDA de la proteína y el fósforo mostraron tendencia a ser mayores cuando se adicionó 1000 UDF. Los CDA de la proteína del gluten de maíz mostraron diferencias significativas entre la dieta de 0 UDF de fitasa y la que tenía 1000 UDF (p<0.05) y para el CDA del fósforo las diferencias se presentaron entre 500 UDF y 1000UDF.Palabras claves: Nutrición, Coeficientes de digestibilidad aparente, ácido fítico, peces.
