“…Salivary amylase is thought to reflect changes in noradrenaline levels due to increased activation of the sympathetic-adrenal-medullary system (9,10). It is conceivable that salivary amylase is released due to activation of β-adrenoceptors (ARs) in the acinar cells of the parotid glands (11) and/or the sympathetic nerves in the central nervous systems.
