Die polarimetrische Messung der α-Amylase-Aktivität

Abstract: Zusammenfassung: Die relativ langsam ablaufende Hauptreaktion der amylasekatalysierten Hydrolyse von Oligosacchariden ist die Voraussetzung dafür, daß die Mutarotation als natürliche Folgereaktion keinen wesentlichen Einfluß auf die Kinetik der Gesamtreaktion besitzt. Für eine polarimetrische Aktivitätsbestimmung der -Amylase sind relativ große Probenmengen und lange Meßzeiten (Drehwinkeländerung pro Zeit) notwendig.
