“…Albumin and casein are not present in the blood and therefore must be synthesized from blood precursors; proteins are subdivided into casein, which represent 80% of the total protein and serum protein represented by albumin, α-lactalbumin, β-lactoglobulin, immunoglobulins and protease-peptone, totaling the remaining 20% (Tronco, 2013).
