Development of a Novel Methodology for the Analysis of Ergosterol in Mushrooms

Abstract: Sterols are important molecules in the unsaponifiable fraction of several matrices. Ergosterol, which is an important vitamin D 2 precursor, is clearly the main sterol in mushrooms.
