Determination of trans-isomers of unsaturated Fatty acids in foods by FTIR

Abstract: It has been proven that the trans-isomers of unsaturated fatty acids that are formed during the hydrogenation of vegetable oils have negative effects on human health. Therefore, it is important to control the content of trans fatty acids in foodstuffs.
