Determination of the Elemental Composition of Coffee Using Instrumental Methods

Abstract: Although the content of elements in coffee is only about 5 % (m/m), it seems to be a good indicator of the coffee authenticity. Apparently, it can bring the useful information about individual elemental patterns that are distinctive to the origin of growing soils for coffee plants in addition to cultivation and environmental conditions used.

“…It is recognized as a rich source of elements, including essential as well as toxic, that the coffee plant may take up from a polluted soil, fertilizers or water and air contaminations. A concise review concerning the elemental analysis of coffee has been presented very recently by Pohl et al (Pohl et al 2013). Because of the ease of use and cleanliness of the preparation, soluble/instant coffee enjoys popularity (Vega-Carrillo et al 2002;Oliveira et al 2012) and today, an interest in the consumption of specific soluble coffees as slim coffees, can be observed.…”

“…Studies concerning Se and As in soluble coffee are rather scarcely documented than those devoted to other elements (Pohl et al 2013). Accordingly, there have been only few reports on the concentration of aforementioned elements (Vega-Carrillo et al 2002; Jose dos Santos and de Oliveira 2001;Ribeiro et al 2003;Asfaw and Wibetoe 2005).…”

“…In general, the elemental analysis of ground coffee infusions is rare (Pohl et al 2013). In case of FAAS measurements, portions of infusions are commonly evaporated to the near dryness, while remaining residues are ashed and reconstituted in a HCl solution (Grembecka et al 2007) or digested in a mixture of concentrated HNO 3 and HClO 4 solutions (Ashu and Chandravanshi 2011).…”

“…Commercial and social importance of coffee is obvious and therefore great awareness and concern to the elemental composition of this beverage is attached (Pohl et al 2013). The information on the total concentration of minerals, micronutrients, or trace elements in coffee is commonly used to assess its quality and safety or differentiate types of this beverage (Dos Santos et al 2010;Bertrand et al 2008;Filho et al 2007;Grembecka et al 2007;Fernandes et al 2005;Dos Santos and de Oliveira 2001;Martin et al 1996Martin et al , 1999Onianwa et al 1999).…”

“…Dos Santos et al [27] have evaluated some metals in Brazilian coffees cultivated during the process of conversion from conventional to organic agriculture. Pohl et al [28] have described different techniques for the determination of the elemental composition of coffee. Nędzarek et al [29] have reported the concentrations of six heavy metals (Mn, Co, Ni, Cr, Ag, Pb) in coffee infusions from eleven samples, roasted and purchased in four countries: Bosnia and Herzegovina, Brazil, Lebanon and Poland.…”
