“…LAE can form mixed micelles with Tween 20 (Asker et al, 2011), and the tail of LAE has a closer similarity to the laurate moiety of Tween 20 than the oleate of Tween 80 (McClements, 2004). The better surface activity synergy between LAE and Tween 80 than that of Tween 20 can possibly result from the lower hydrophilic-lipophilic balance (HLB) of Tween 80 (HLB = 15) than Tween 20 (HLB = 16.7) when CBO is emulsified and after heating and quenching (Lv et al, 2014;Rao et al, 2014). Both Ostwald ripening and coalescence can contribute to sedimentation of droplets observed for the emulsions prepared with Tween 20, due to growth of droplets during storage which was not measured due to instability of emulsions.…”
