Determinants in the modern choice of food

Abstract: This paper is the first attempt to integrate contemporary discussions on the choice, role and significance of food in people's everyday lives. It goes beyond the purely economic‐quantitative dimensions of food and relates them to the income factor. It is a revised version of a paper which first appeared in Finnish in Discussion Papers No. 33 published by the Labour Institute for Economic Research, Helsinki.

This may also demonstrate that people possessing little cultural capital do not participate in the symbolic struggles to the same extent as those higher up in the sociocultural hierarchy.…”

“…Cultural factors related to, say, symbolic aspects in social relations are likely to increase their influence on food consumption decisions. 32 It is obvious that along with the development of international trade, the importance of biological and ecological constraints in the choice of food has diminished, and the impact of cultural code has grown. As time goes on the domain of the rational choice theory seems to narrow.…”
