Detecção De Adulteração E Caracterização Físico-Química De Mel De Abelha De Pequenos Produtores Do Interior Gaúcho

Abstract

Este trabalho objetivou analisar qualitativamente e por parâmetros estabelecidos em normativas, méis comercializados em pequenas propriedades do Sul do Brasil visando a detecção de fraude. As cinco amostras de mel foram submetidas a análises de Reação de Fiehe, Lugol e Lund, além de adição de corantes, acidez total e pH, nas quais todas as amostras não apresentaram indícios de fraude e o pH estabeleceu-se na faixa de 3. Assim constata-se que análises para fraude de méis podem ser realizadas através de testes analíticos qualitativos clássicos.
