Cooking and drying processes optimization of Pentadesma butyracea kernels during butter production

Abstract: The cooking and the drying of the Pentadesma butyracea kernels are the main steps in the traditional method of extracting P. butyracea butter. In this work, the Response Surface Method with Central composite design was used to optimize the cooking and drying of Pentadesma kernels during P. butyracea butter production. The cooking and drying times, as well as the drying temperature of Pentadesma kernels are considered as independent factors. The moisture content of the Pentadesma kernels, the quantity, the acid… Show more

“…The seed fat has medicinal, nutritional, sociocultural, economic, cosmetic, and pharmaceutical uses [ 1 , 2 ]. The seeds have a fat content of about 50% with enhanced characteristics compared to shea butter regarding solidification point, slip point, saponification number, and fatty acid composition [ 3 , 4 ]. Fat extraction can be done by chemical or physical methods.…”

“…Traditionally, woman processors employ the wet extraction method in PBSB extraction [ 5 , 6 ]. The physical extraction of PBSB involves procedures such as seed drying, crushing and roasting, grinding, kneading, churning, boiling, filtration, and cooling [ 4 , 5 ]. The crushing or cracking and milling enhance oil extraction while the heat treatment improves sensory characteristics and cell emulsion rupture and decreases oil viscosity.…”
