In an aim to prove the efficiency of polyphenols of Rosa canina fruits in promoting human health. A methanolic extract of R. canina fruits was prepared by successive maceration with solvents of increasing polarity. The polyphenol composition was analyzed by HPLC–DAD–ESI–MS. The biological activity of this extract on SH‐SY5Y cells and HepG2 cells was then studied. The antioxidant activity was tested by various in vitro tests such as DPPH‐radical‐scavenging activity, FRAP assay, hydroxyl radical scavenging assay and total antioxidant capacity. The subacute toxicity of R. canina was tested on female rats by repeated intraperitoneal administration of various doses. The phenolic profiles showed 25 antioxidants distributed into three classes of phenolic compounds: glycosylated and agglomerated flavonoids/isoflavonoids, tannins and phenanthrenes. Qualitative phytochemical analyses showed that this extract lacks alkaloids. The methanolic extract of R. canina fruits has a total antioxidant capacity of 82.69 ± 1.18 μg EAA/mg of methanol extract and the IC50 of the methods used is in the following increasing order: FRAP assay (61.88 μg/ml), then hydroxyl radical scavenging assay (67.45 μg/ml) and then DPPH radical‐scavenging activity (129.81 μg/ml). The extract of R. canina did not cause any phenotypic signs of toxicity or mortality during and after treatment. The LD50 was >5,000 mg/kg, hence, R. canina was considered nontoxic. An in vivo study proved the protective effect of R. canina against cardiac and hepato‐renal toxicities. These results drew the importance of a healthy diet, where diets rich in R. canina fruits can be used as a rich natural source of antioxidants and anticarcinogenic phenolic compounds.

Dog rose (Rosa canina L.) is a rosehip used for domestic and industrial purposes. It has great antioxidant compounds such as lycopene and phenolic compounds. In the present study, technological processing was investigated to formulate a functional tea with great nutraceutical compounds. The drying conditions were optimized to have maximum antioxidant properties. The optimum conditions were 68°C and 1 m s−1, providing the values of 40751.17 mg GAE/kg, 14.17 mg EGC E/100 g, 278.87 mmol TE/g, 44.62 mmol ISE/g, 3051.36 mg/kg, and 13.28 mg/kg for TPC, TFC, DPPH radical scavenging, FRAP, ascorbic acid, and lycopene, respectively. Midilli model described well the drying behavior of Dog rose and, Peleg, Weibull and Vega‐galves models predicted well the rehydration kinetics. A two‐factor and central composite design was applied to evaluate the effects of decoction time and solid‐to‐liquid ratio. At the optimal conditions, the Dog rose tea had 98141.28 mg GAE/kg, 2720.66 mg EGC E/100 g, 8616.57 mmol TE/g, 728.24 mmol ISE/g; and 3,358 for TPC, TFC, DPPH radical scavenging, FRAP, and ascorbic acid content, respectively. The findings showed that Dog rose fruit is a great source of nutraceutical compounds and a potential industrial product. Practical application The drying conditions to have a dried fruit with high antioxidant properties were determined. The dried Dog rose fruit is stable for long storage period and be afforded in off‐seasons. Optimization and mathematical models were successfully applied to determine the optimum drying conditions and to predict the drying and rehydration kinetics, respectively. Midilli model was the most fitted model to predict the drying kinetics, while, Peleg, Vegas‐gálves and Weibull models depicted better the rehydration kinetics at 20, 40, and 60°C. The dried fruit can be used in food, cosmetic, and pharmaceutical industries for many purposes. A functional fruit tea was formulated and optimized for its nutraceutical properties. This tea is a functional food used as a natural preventive remedy for flu, cancer, anemia, cardiovascular diseases and diabetes as well.

Pitaya, or dragon fruit, (Hylocereus polyrhizus) contains in its pulp and peel a high concentration of phenolic compounds, flavonoids and high antioxidant activity. The pulp is used in industries and the peel can be a source of bioactive compounds. The aim of this study was to optimize the extraction of phenolic compounds from pitaya peel flour, dried through freeze-drying. Thus, a central composite rotatable design (CCRD) was performed with two variables (X 1 = ethanol percentage, of 0-100% as extraction solvent; X 2 = extraction time, of 5-120 minutes assisted by ultrasound) resulting in 11 experiments. The response variables were the content of total phenolic compounds by the methods of Folin-Ciocalteau and Fast Blue BB, total flavonoids and antioxidant activity by capture of radicals 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid); 2,2-diphenyl-1-picrylhydrazyl (DPPH); reduction of iron III (FRAP). It was possible to design the response surface for the analysis of total flavonoids and ABTS. The region of optimal flavonoids extraction, where the extract also demonstrated greater antioxidant activity by the ABTS method, is comprised between 13 and 57% of the ethanol as a solvent and time above 86 minutes of extraction in ultrasonic bath.
