The demand for high-quality chilled chicken has continued to increase in China. Chickens are sexually dimorphic, and to better understand the specific differences in chicken production based on sex, we examined how sex affects growth performance, carcass traits, and meat quality of yellow-feathered chickens. Male and female Xueshan chickens were used as the experimental model. Although males exhibited better growth performance, including body weight (BW), body slope, keel, shank length, and shank girth (p < 0.05), as well as carcass traits, such as dressed weight, leg muscle, and lean meat, females had higher carcass and breast muscle yields (p < 0.05). Males had higher follicle density and yellowness (b*) of the skin and better skin than females (p < 0.05). Among blood biochemical parameters, the serum content of corticosterone (CORT) was higher in males, while those of superoxide dismutase (SOD), glutathione peroxidase (GSH-PX), total antioxidant capacity (T-AOC), and catalase (CAT) were lower in males than in females (p < 0.05). The pH levels, shear force, and moisture content quality were better in male breast meat, while the intramuscular fat content (IMF) was lower in males than in females (p < 0.05). The redness (a*) and moisture content were higher in male leg meat, while the pH, water-loss rate (WLR), lightness (L*), and IMF were lower (p < 0.05). The muscle fiber diameter and cross-sectional area were also higher in males (p < 0.05). Consumers felt that soup of male chicken was better than female (p < 0.05), while mouthfeel and tenderness acceptance of breast meat were different between the sexes. These results indicate that female chickens can be marketed as a whole carcass, while males are more suitable for processed carcass products. This study provides significant insights into the production and processing methodologies of yellow-feathered chickens.

Association between Paternal Telomere Length and Offspring Production Performance in Korean Native Chickens

The effect of paternal telomere length on reproductive performance, relationship between paternal and offspring telomere length, and association between paternal telomere length and offspring production performance were investigated in Korean native chickens. Using 22 paternal chickens and 329 offspring, the paternal reproductive performance such as fertility, embryo mortality, and hatchability, as well as the offspring production performance such as survival rate, body weight, and weight gain were analyzed. Telomere length was analyzed through quantitative fluorescence in situ hybridization using lymphocytes. No significant differences were observed in fertility, embryo mortality, and hatchability between paternal chicken telomere lengths (P<0.05). These results indicate that paternal telomere length had a weak negative correlation with fertility and embryonic death rate but a weak positive correlation with hatchability. The correlation coefficient between paternal telomere length and offspring survival rate was r=0.17 (P>0.05). The group of offspring with long paternal telomeres showed relatively poor growth performance. Moreover, a significant negative correlation was estimated between paternal telomere length and offspring growth performance (P<0.05). The correlation coefficient between paternal and offspring telomere lengths was r=0.075 (P>0.05). In conclusion, there was a weak association between paternal telomere length and reproductive performance, offspring survival rate, and offspring telomere length, respectively. However, paternal telomere length and offspring growth performance showed a negative relationship. Such results could be due to the re-extension of telomere length by telomere reprogramming in the early embryonic stage and the different degree of telomere shortening between individuals with increasing age after birth.

The Effects of Beak Trimming and Crossbreeding-Combinations on the Productive Performance and Stress Response Levels of Korean Native Chickens

This study aimed to investigate the effects of beak trimming and crossbreeding-combinations on the productive performance and stress response levels of Korean native chickens. The study divided 248 individuals from six crossbreedingcombinations into two groups: one underwent beak trimming, and the other did not. The survival rate, body weight, egg production rate, egg quality, feather damage score, HSP-70 gene expression level, H/L ratio, and intracellular DNA damage rate were measured and analyzed. The results showed that the beak-trimmed group had significantly higher survival rates and hen-housed egg production compared to the non-beak-trimmed group (P<0.05). Feather damage and DNA damage rates were significantly lower in the beak-trimmed group (P<0.05). On the other hand, there were no significant differences between the two groups in adult body weight, hen-day egg production, egg quality, HSP-70 gene expression level, and H/L ratio. Among the crossbreeding-combinations, there were significant differences in survival rate, body weight, feather damage score, egg quality, and DNA damage rate (P<0.05), while egg production rate, HSP-70 gene expression level, and H/L ratio showed no significant differences. There was an interaction between beak trimming and crossbreeding-combinations in some traits. In conclusion, beak trimming in Korean native chickens has a positive impact on productive performance, and in terms of stress response, beak trimming may not act as a stress factor or may even reduce stress after the growing period. Furthermore, there were differences in productive performance and stress response levels among crossbreeding-combinations, but the effects of beak trimming were similar across these combinations.
