Common Vetch (Vicia sativa) as a New Starch Source: Its Thermal, Rheological and Structural Properties After Acid Hydrolysis

Abstract: The common vetch plant is used mainly for animal nutrition. The seeds from this leguminous plant contain a relatively high quantity of starch. There are few studies regarding common vetch and this research was designed to evaluate the thermal, rheological and structural properties of the starch extracted from common vetch seeds, both native and after treatment with HCl at different concentrations (0.1 mol L −1 and 0.3 mol L −1 ) and temperatures (25°C and 50°C). The curves obtained from differential scanning c… Show more

“…As shown in Table , the moisture of the samples varied between 7.49 and 8.69%. Values between 10.5 and 11.2% were found by other authors . The dehydration temperature showed in the first mass loss was similar for the native starches.…”

“…The pasting properties of samples were obtained with RVA‐4 equipment (Newport Scientific, Australia), where 28 g of an 8% dispersion of starch (d.b.) were prepared and subjected to the following heating (until 95 °C) and cooling cycle (until 50 °C) …”

“…The samples were placed on a carbon tape and pulverised with gold and palladium to promote the electrons conductivity. A tension of 20 kV was generated by a lamp with tungsten filament [14]. The chemicals elements present in the samples were identified by EDS, which is based on the released energy measurement when an excited atom (due to electron beam that focuses on the sample) returns to its normal state.…”

“…Many researchers also found that the botanical origin and crystalline type of starch could influence the hydrolysis kinetics, which meant that the different inner structure of starch granules had a different acid hydrolysis process. However, up to now almost all studies on the physicochemical properties of acid hydrolyzed starch are based on the native starch treated by acid . There is still little insight on the acid hydrolysis of modified starch with different crystalline structure.…”
