Cholesterol Information and Shell Egg Consumption

Abstract: U.S. per capita shell egg consumption has declined steadily since 1955 despite a falling real price. This paper investigates how information about cholesterol, as measured by a newly constructed index based on medical journal articles, has affected U.S. demand for shell eggs. The results of a fixed coefficient model indicate that information on the links between cholesterol and heart disease had decreased per capita shell egg consumption by 16% to 25% by the first quarter of 1987. “…Some authors have suggested that food retailers should seize on food safety as a market segmentation mechanism (Caswell, Roberts, and Lin 1994;Henson and Northen 1998;Caswell 1998). While the Hawaiian milk scare was eventually resolved, new medical evidence about food-related health problems can sometimes permanently alter preferences and traditional demand modeling becomes inadequate (Yen, Jensen, and Wang 1996;Brown and Schrader 1990;van Ravenswaay and Hoehn 1991;Chavas 1983). …”

“…Consumers received this information from many sources, including physicians, neighbours and the popular press (Brown and Schrader, 1990). According to Cameron (2005) most of the fear expressed by consumers is related to the fat in red meat and dairy produce.…”
