Chemical Composition of Two Different Extracts of Berries Harvested in Serbia

Abstract: Total phenolic content (TPC), total anthocyanin content (TAC), free and total ellagic acid content, sugars, minerals, and radical-scavenging activity were determined in nine berries harvested in Serbia. More than 30 phenolic compounds were identified; among them, 11 polyphenols and cis,trans-abscisic acid were quantified using UHPLC coupled with an LTQ-Orbitrap XL mass analyzer. For the first time chrysin, naringenin, pinocembrin, and galangin were quantified in some of the investigated berry species. The extr… Show more

“…The total phenolic content of seeds and skin was determined using the partially modified spectrophotometric method according to Folin-Ciocalteu described by Pavlović et al [34]. A standard curve was constructed with 20, 40, 60, 80, and 100 mg gallic acid per liter.…”

“…They are also rich in organic acids (citric, fumaric, tartaric) that determine taste and flavor and typically contain low amounts of fat and proteins (Ruby et al 2000;Sturm et al 2003). Some fruits (mainly berries) are rich sources of flavonoids and other phenolic compounds possessing antioxidant activity (Määttä et al 2003;Pavlović et al 2013), but fruits might be also a source of toxic elements, mycotoxins, or pesticides (Pavlović et al 2013;Stachniuk et al 2017).…”

“…N, K, Ca, Fe, Sl and Na content was 6412, 1300, 13,800, 800, 420 and 120 rpm, respectively. Generally, the elements like K and Ca are mostly present in all the berries like raspberry, blackberry, mulberry and strawberry (Pavlovic et al 2013). Ca has been reported to be effective in building of skeletal structures and muscle functioning which was beneficial to human body so that they were thought to be used as food materials useful in health.…”
