Fruits and vegetables are known as sources of nutritionally important phytochemicals, such as phenolic compounds, and Brazilian biodiversity may be hiding many underexplored fruits with potential health benefits. In this study, we formulated a fruit-based beverage by supplementing known amounts of freeze-dried araçá-boi (Eugenia stipitata) (FD) to a commercial apple nectar in order to evaluate the impact in terms of nutritional (level of phenolic compounds, flavonoids and antioxidant capacity) and sensory parameters. The best acceptance was evidenced for the apple nectar supplemented with 1 g/L of FD, while no statistically significant changes were obtained for non-supplemented apple nectar and apple nectar supplemented with 5 or 10 g/L FD. Lower acceptances for apple nectars supplemented with 15, 20 or 30 g/L FD were suggested to be caused by an increase in acidity. In general, total phenols, flavonoids and antioxidant capacity (DPPH, TEAC and ORAC) increased with the supplementation level, although not always a statistically significant difference was observed. When compared to control (non-supplemented), the apple nectar supplemented with 10 g/L FD presented a significant increase in total phenols, flavonoids and antioxidant capacity (except for ORAC assay), and therefore this level of supplementation was considered ideal, considering both nutritional and sensory properties.

Abstract:The Araca-boi is a native fruit of the Amazon region and its fruits have great potential for agro-industrial use due to the intrinsic characteristics of the pulp. The seeds are dormant and the primary cause could be due to the presence of inhibiting chemicals germination and can also be caused by the impermeability in tegument. The objective of this study was to assess the osmopriming efficiency promoted by Sucrose (C 12 H 22 O 11 ) and Potassium Nitrate (KNO 3 ) on germination of seeds of araca-boi in different immersion times. Thus, the seeds were osmoconditioned in following solutions: C 12 H 22 O 11 , KNO 3 , KNO 3 + C 12 H 22 O 11 and H 2 O, by period of 6, 12 and 24 h. Throughout of 70 days were evaluated the germination percentage and germination rate (index). The experiment is based on a completely randomized in a factorial analysis 4x3 with four replications of 10 seeds. The osmopriming of Araca-boi seed in KNO 3 solution was shown to be efficient both to promote germination and the germination rate. The Araca-boi seeds osmoconditioned in KNO 3 solution has an average efficiency of 99% in the germination percentage up to 70 days. The osmopriming period showed no influence on seed germination of the seeds of Araca-boi.Resumo: O araçá-boi é uma frutífera nativa da região Amazônica e seus frutos apresentam grande potencial de aproveitamento agroindustrial devido às características intrínsecas de sua polpa. Suas sementes são dormentes e a principal causa pode ser devido à presença de substâncias químicas inibidoras da germinação e também pode ser causada pela impermeabilidade do tegumento. Neste contexto, o objetivo neste trabalho foi avaliar a eficiência do osmocondicionamento promovido por Sacarose (C 12 H 22 O 11 ) e Nitrato de Potássio (KNO 3 ) na germinação de sementes de araçá-boi, em diferentes tempos de imersão. Para tal, as sementes foram osmocondicionadas em soluções de C 12 H 22 O 11 , KNO 3 , KNO 3 ,+ C 12 H 22 O 11 e H 2 O, por períodos de 6, 12 e 24 h. Foram avaliadas no período de 70 dias, a porcentagem de germinação e a velocidade de germinação (índice). O delineamento utilizado foi o inteiramente casualizado em fatorial 4x3, com 4 repetições de 10 sementes. O osmocondicionamento de sementes de araçá-boi em solução de KNO 3 é eficiente para promover a germinação e a velocidade de germinação. Sementes de araçá-boi osmocondicionadas em KNO 3 apresentam porcentagem de germinação de 99% até os 70 dias. O período de osmocondicionamento não influencia na germinação das sementes de araçá-boi.Palavras-chave: Eugenia stipitata. Dormência. Priming.

Neste trabalho foram determinados Cu, Fe, Mn and Zn em extratos de castanha-do-Pará (Bertholletia excelsa), semente de cupuaçu (Theobroma grandiflorum) e polpa de coco (Cocos nucifera) usando extração sólido-líquido e espectrometria de absorção atômica com atomização eletrotérmica. Foram empregadas diferentes soluções extratoras (mistura de metanol e clorofórmio 1:2 v/v, água, 0,5 mol L -1 NaCl, 70% v/v etanol e 0,5 mol L -1 NaOH) para extração de lipídios, albuminas, globulinas, prolaminas e glutelinas, respectivamente. As concentrações de proteínas encontradas na castanha-do-pará foram maiores do que aquelas encontradas na semente de cupuaçu e polpa de coco. Nas frações lipídicas foram encontradas maiores concentrações de Fe em castanhado-pará e semente de cupuaçu e Zn em polpa de coco. As determinações dos elementos nos extratos proteicos de castanha-do-pará indicaram que eles estão ligados, preferencialmente, às albuminas, globulinas e glutelinas. O mesmo comportamento não foi observado para semente de cupuaçu e polpa de coco. As concetrações dos elementos variaram para os diferentes extratos proteícos. Em geral, as maiores concentrações de proteínas foram determinadas nos extratos em NaOH. Por outro lado, as menores concentrações de Cu, Fe, Mn e Zn foram encontradas nessa fração.In this work Cu, Fe, Mn and Zn were determined in extracts of Brazil-nut (Bertholletia excelsa), cupuassu (Theobroma grandiflorum) seeds and coconut (Cocos nucifera) pulp, using solid-liquid extraction and electrothermal atomic absorption spectrometry. Different extractant solutions (mixture of methanol and chloroform 1:2 v/v, water, 0.5 mol L -1 NaCl, 70% v/v ethanol, and 0.5 mol L -1 NaOH) were used for extracting lipids, albumins, globulins, prolamins and glutelins, respectively. The protein concentrations determined in Brazil-nut are higher than those observed for cupuassu and coconut pulp. The analysis of lipid fractions reveals high concentations of Fe in Brazil-nut and cupuassu seed and Zn in coconut pulp. For Brazil-nut, these elements are mainly associated to albumin, globulin and glutelin fractions. The same behaviour was not observed for cupuassu seed and coconut pulp. The element concentrations changed in each protein fraction. In general, high concentrations of proteins were determined in NaOH extractants.
