Oil bodies (OBs) are micron-or submicron-sized sub-organelles widely found in plants seeds and nuts. The structure of OBs is composed of a core of neutral lipids covered by a phospholipid-protein layer, which ensures the stability of OBs under extreme environmental conditions and further protects core lipids as energy reserves. As naturally pre-emulsified oil-in-water emulsions, OBs have been gradually applied to replace synthetically engineered oil droplets. In this paper, the recent research on the extraction, composition, stability, food applications, in vitro digestion, and future perspectives of plant OBs were reviewed. Recent studies have focused on the large-scale extraction techniques and OBs surface protein identification and function. Electrostatic deposition and viscosity effect of polysaccharides significantly improve the stability of OBs emulsions. OBs have broad application prospects in replacing milk fat droplets, as fat replacers and delivery vehicles, and fabricating emulsion-gels, oleogels or edible films. Notably, oleosins present a potential allergen risk. OBs are digested slowly, resulting in increased satiety and effectively helping to reduce calorie intake, but this can negatively affect the bioaccessibility of nutritional compounds in OBs. When OB as a delivery vehicle, its natural structure may be disrupted, whereas OBs-based delivery system facilitates the bioaccessibility of hydrophobic active compounds.

Electrostatic deposition of polysaccharides significantly improves the stability of OBs emulsions. OBs emulsions have promising applications to encapsulate bioactive compounds, deliver targeted drugs, and prepare gels and edible functional films. The digestive behavior of OBs emulsions is similar to that of protein-stabilized emulsions, which can increase the satiety, effectively help reduce calorie intake and improve the bioavailability of functional factors. It has also promoted the development of simulated dairy, spices and meat products.

To verify the anti-fungus properties of the crop-harmful pseudocercospora, the essential oil (EO) of pomelo peel (PP) was extracted by a single factor combined with response surface optimization. Meanwhile, the composition and activity of EO were studied. The PP was squeezed by a screw extruder and pretreatmented by pectinase, then extracted by microwave-assisted steam distillation. The optimal conditions were as follows: pectinase dosage was 69.17 μmol/g, microwave power was 651.42 W and extraction time was 43.84 min. The dry weight (DW) yield of PPEO reached 14.63 mL/kg DW after BBD optimization. There were 23 compounds in the PPEO identified by GC-MS. Limonene, α-phrenbutene, and laurene in PPEO accounted for 79.31%, 4.72%, and 3.46%, respectively. In addition, the antifungal was effective when the concentration of PPEO was 3.5 mg/mL. Therefore, this study has guiding significance for the development of natural resources.
