Honey can beneficially act against different human diseases, helping our body to improve its health. The aim of the present study was first to increase knowledge of some biochemical characteristics (amount and composition of polyphenols and volatile organic compounds, vitamin C content) of five Italian legume honeys (alfalfa, astragalus, carob, indigo, and sainfoin). Furthermore, we evaluated their potential health properties by studying their antioxidant and in vitro anti-inflammatory activities and in vitro inhibitory effects on three enzymes involved in neurodegenerative diseases (acetylcholinesterase, butyrylcholinesterase, and tyrosinase). Alfalfa honey showed the highest total polyphenol content (TPC) (408 μg g−1 of product). Indigo honey showed the lowest TPC (110 μg g−1 of product). The antioxidant activity was noteworthy, especially in the case of sainfoin honey (IC50 = 6.08 mg), which also exhibited excellent inhibitory action against butyrylcholinesterase (74%). Finally, the correlation between the biochemical and functional results allowed us to identify classes of molecules, or even single molecules, present in these five honeys, which are capable of influencing the properties indicated above.

The use of non-steroidal anti-inflammatory drugs (NSAIDs), analgesics, and corticosteroids had been the treatment approach for inflammation via the inhibition of cyclooxygenase 2 (COX2). However, long-term usage threatens the human organs such as the liver, kidneys and the gastrointestinal tract due to their side effects. 3 Hence, the need for an alternative with lesser or no adverse effect while proffering a comparable therapeutic effect for the treatment of inflammation cannot be overemphasized. Traditional remedies have recently gained increased acceptance and application in Africa as inflammatory-related diseases, epidemics, and pandemics appear to be on the increase. 4 Medicinal plants have proved to be an excellent alternative to conventional medicines due to their richness in diverse types of phytochemicals and micronutrients such as alkaloids, flavonoids, terpenes, tannins, saponins, zinc, iron etc. These phytochemicals are responsible for the therapeutic activities of medicinal plants such as antioxidant, antimicrobial, antidiabetic, anticancer, neuroprotective effects. 3,4 Ginger -Zingiber officinale Roscoe (family Zingiberaceae) is one of the plants prominently used for several disease management. The use of honey as a food and a medicine date back to prehistoric times. Uses include treating wounds, cuts, burns, coughs and colds. The antioxidant and antibacterial properties of honey are believed to be responsible for its medicinal properties. Honey is usually processed before consumption. Honey is subjected to thermal processing, which adversely affects its quality. Honey can also be processed by nonthermal methods, such as high-pressure processing, ultrasonication, irradiation and microwave processing. In this review, the effects of thermal and non-thermal processing methods on the antioxidant and antibacterial properties of honey have been summarised. Thermal processing and microwave processing of honey adversely affect the antioxidant and antimicrobial activities of honey. In contrast to other nonthermal processing methods, high-pressure processing and gamma irradiation have no effect on the antibacterial activity or antioxidant properties of honey. Ultrasound processing increases antioxidant activity of honey.
