Chemical and microbiological quality of pink shrimp (Penaeus brasiliensis) sold in the city of Salinopolis –PA.

Abstract

The pink shrimp (Penaeus brasiliensis) is one of the most appreciated delicacies among the typical foods of Pará. Crustaceans, as well as fish and molluscs, are of recognized perishability, and may pose risks to the health of the consumer if they do not present the necessary quality, therefore, the microbiological evaluation is an important parameter for the knowledge of its hygienic-sanitary conditions. In this sense, the main objective of the work was to evaluate the physicochemical and microbiological quality of the pink shrimp in natura commercialized in the Municipal Market of Porto Grande, in the Municipality of Salinópolis/PA. A total of 9 tent samples were collected in July 2019. For the analysis of microbiological parameters (molds and yeasts, total coliforms, thermotolerant coliforms, mesophilic aerobic microorganisms and Staphylococcus aureus) and physicochemical (moisture, pH and solids soluble). Humidity ranged from 10.04% to 29.48%; soluble solids from 0 to 0.6; and pH from 4.77 to 7.41, ensuring the compliance described by RIISPOA No. 9.013 of March 2017. The values found for total coliforms ranged from < 3.0 to 9.2x10 1 NMP/g, with 88.89% of the samples being in accordance with what is recommended in Ordinance No. 451/1997 of the Health Surveillance Code of the Ministry of Health (<10 2 NMP/g).The thermotolerant coliforms ranged from 0.1x10 2 to 1.1x10 3 NMP/g, with 11.11% of the samples contaminated, according to the prescribed value (< 10 2 NMP/g), in the aforementioned ordinance.Mesophilic counts ranged from 1.4x10 6 to 7.6x10 6 UFC/g, with 100% of samples acceptable for consumption, as shown by the ICMSF (1986), establishing a maximum limit of 10 7 UFC/g for frozen raw crustaceans. Mold and yeast results ranged from 0 to 8.3x10 3 UFC/g, with 66.66% of the samples being in agreement with DIPOA (< 2.5x10 2 UFC/g). For Staphylococcus aureus values ranged from 0 to 9.8x10 5 UFC/g, with 44.44% of the samples showing agreement with RDC ANVISA nº 12/2001 (up to 10 3 UFC/g). In general, the results were satisfactory for consumption, however, the presence of some microorganisms indicators of contamination suggests the need for measures to control and inspect the quality of shrimp sold in the city of Salinopolis-PA.
