Abstract: En México, el consumo de verdolagas (Portulaca oleracea), quelites (Chenopodium spp.), quintoniles (Amaranthus spp.), huauzontles (Chenopodium spp.) y romeritos (Suaeda spp.) se mantiene desde épocas precolombinas. “…Species of quelites with edible leaves, flowers, vines and stems contribute a significant amount of carbohydrates, fats, dietary fiber, protein, vitamins and minerals to the diet.
