Cadmium Intake, Dietary Patterns and Hyperuricemia Among Adults in China

Abstract: Blood and urine cadmium levels have been found to be positively associated with hyperuricemia (HU) in some studies. Few studies have examined the association between dietary cadmium intake, dietary patterns and HU in the Chinese population. The study analysed data from 8429 adults who participated in the China Health and Nutrition Survey (CHNS). Dietary intake was assessed by 3-day 24 h food record in seven waves of survey (

“…Rice is the staple food and major source of carbohydrate in traditional southern dietary patterns, and may also be a potential source of dietary cadmium due to contamination [63,64]. Therefore, the positive association between dietary GL values and prevalence of hyperuricemia in southern participants may be attributed, in part, to the higher dietary cadmium intake from rice [63]. We also reported a lack of a significant association between dietary GI values and prevalence of hyperuricemia.…”

“…Of note, the positive association between dietary GL values and prevalence of hyperuricemia was only observed in participants from southern rather than northern China. A recent study reported positive associations between traditional southern dietary patterns and dietary cadmium intake and increased prevalence of hyperuricemia in CHNS cohort [63]. Rice is the staple food and major source of carbohydrate in traditional southern dietary patterns, and may also be a potential source of dietary cadmium due to contamination [63,64].…”

“…These studies have not evaluated dietary sources of Pb from combinations of diverse foods and nutrients because some dietary nutrients (e.g., iron) can interfere with the intestinal absorption of Pb(Shah-Kulkarni, et al 2016). Dietary pattern analysis has recently been developed to investigate comprehensive dietary links with health (Sanchez, et al 2020, Shi 2020) to better represent nutritional exposures and re ect daily eating habits.…”
