Broiler carcass condemnation pattern during processing

Abstract: This study aimed to identify the influence of climate pattern and rearing conditions on broiler carcass condemnations observed during processing. We evaluated the registered data of 2015 from the federal inspection files in all broiler slaughterhouses located in the state of Mato Grosso do Sul, Midwestern Brazil. The percentages of condemnations by airsacculitis, cellulitis, dermatosis, ascites syndrome, total carcass condemnations, and average broiler weight at 42 days were analyzed. Data were associated with… Show more

“…The relationship between causes of condemnation and annual variations in rainfall, humidity, and the temperature has already been studied by other authors (d'Arc Moretti et al, 2010;Belintani et al, 2019). In the present study, the only cause of condemnation for non-technological failures with an ASI difference was an ascitic syndrome, with the highest values identified in the months of July to October (P < 0.05) (Graph 3).…”

“…Technological failures were defined as those that occurred during the harvesting, transportation, or slaughtering processes. Non-technological failures were defined as other causes of condemnation, such as the presence of a pathogenic agent, precarious hygienic conditions in production, or climatic variations (Belintani et al, 2019;Ludtke et al, 2010;Schulze Bernd et al, 2020).…”

“…Ascites represents one of the main causes of condemnations in the abattoir (MASCHIO & RASZL, 2012;BELINTANI et al, 2019). This pathological condition is characterized by accumulation of fluid in the abdominal cavity produced by general causes of edema (BAGHBANZADEH & DECUYPERE, 2008), which is a progression of ascites syndrome.…”
