Binary Complex Based on Zein and Propylene Glycol Alginate for Delivery of Quercetagetin

Abstract: Propylene glycol alginate (PGA) was found to be able to dissolve in aqueous ethanol solution and applied to interact with zein to form a noncovalent binary complex by the antisolvent coprecipitation method at pH 4.0. Quercetagetin (Q) was employed to explore the Q-delivery potential of Zein-PGA binary complex. A fruit tree-like microstructure was observed for Zein-PGA binary complex as its "branches" were closely adsorbed by zein particles. A solid sponge-like entity was formed after lyophilization of Zein-PGA… Show more

“…The physical stability analysis was a space-related and time-related transmission profile over the sample length and the greater change in the transmission with centrifugation, the worse stability of the emulsion [27,58]. In Figure 10A, the transmission curves of all emulsions showed a floating phenomenon (creaming).…”

“…Fluorescence spectroscopy is commonly used to detect restructuring in prolamins. Fluorescence quenching may occur due to the diverse molecular interactions, such as molecular rearrangements, energy transfer, and ground‐state complex formation (Sun, Dai, & Gao, 2016). For example, increasing the resveratrol concentration results in a red shift, indicating a maximum emission, and then the emission intensity gradually decreases, suggesting that the fluorescence was quenched when resveratrol was added to gliadin (Davidov‐Pardo et al., 2015a).…”

“…on their molecular chains, polysaccharides can participate in the preparation of nanocarriers together with proteins according to the following mechanisms: chemical cross‐linking, physical cross‐linking, poly‐ion complex formation, and self‐assembly (Nitta & Numata, 2013). Combining zein with polysaccharides to form nanodelivery systems can provide more prospects for the utilization of hydrophobic bioactivities compared to individual polymers (Sun, Dai, & Gao, 2016). Polysaccharides such as chitosan, alginate, and pectin, among others, have already employed with zein to produce nanodelivery systems.…”
