Der Apparat wird im allgemeinen mit Wechselstrom gespeist; soll die Speisung jedoch mit Gleichstrom stattfinden, so mu6 der innere der beiden hohlzylindrischen Eisenkerne rotierend angeordnet werden, um den beabsichtigten Effekt hervorzu bringen.Auch das letzte Jahr brachte wiederum eine Reihe von Veroffentlichungen vorwiegend analytischen Inhalts. Von den Nahrungsmittelchemikern wurde hauptsachlich iiber den N a c h w e i s d e s K o k o s f e t t s i n d e r B u t t e r gearbeitet, fur die technische Fettchemie sind in erster Linie die Arbeiten uber die quantitative Bestimmung des G 1 y c e r i n s von Interesse. Dagegen wurde von der rein theoretischen Forschung das Gebiet der Fette nach wie vor ziemlich stiefmutterlich behandelt, trotzdem hier nicht nur Probleme ihrer Losung harren, welche fur einzelne Industriezweige, sondern auch solche, welche fur die Nahrungsmittelchemie und damit fur die Allgemeinheit von Bedeutung sind. L e w k o w i t s c h die Kapitel: Ole, Fette, Wachse, Seifen, Kerzen, Glycerin, Tiirkischrotol, Firnisse und spezielle Methoden der Olindustrie bearbeitet. -Auch D. H o 1 d e bringt in seinem Buche: U n t e r s u c h u n g d e r M i n e r a l o l e u n d F e t t e , s o w i e d e r i h n e n v e r w a n dt e n S t o f f e , n i i t b e s o n d e r e r B e r u c ks i c h t i g u n g d e r S c h m i e r m i t t e 12) eineauf der Hohe der Zeit stehende Beschreibung der fur die technische Fettanalyse maBgebenden Methoden. Derartige kurze Anleitungen bilden eine Erganzung der Lehrbucher, vor deren Ausfiihrlichkeit erfahrungsgemaB manche Fachgenossen zuruckschrecken, welche sich nur ausnahmsweise mit der Untersuchung von Fetten zu befassen haben. -Der , , B u n d d e u t s c h e r N a h r u n g sm i t t e 1 f a b r i k a n t c n h a n d l e r" hat ein , , D e u t s c h e s N a h r u n g s m i t t e lb u c h"3) herausgegeben, in welchem die Bedingungen zusammengestellt sind, unter dencn Nahrungsmittel als ,,handelsubLChe, unverfalschte und nicht gesundheitsschadliche Waren" gelten sollen. Begreiflicherweise ist die Tendenz dieses Buches eine andere als diejenige der deutschen ,,Vereinbarungen" oder des schweizerischen ,,Lebensmittelbuchs", welche von Chemikern herausgegeben u n d 1) 3.
