The physiological performance of wheat seeds may be influenced by the harvest season and storage system. This study aimed at evaluating the physiological performance of wheat seeds as a function of different moisture contents at harvest, with later storage under hermetic and conventional systems. Harvest was performed when the seeds reached moisture contents of 28.6 %, 18.5 % and 12.9 %. Subsequently, they were stored for 240 days, in both systems, at room temperature. The evaluation of seed physiological performance was carried out by germination and vigor tests, shoot length and dry matter of seedlings. The germination of wheat seeds stored under the hermetic system increased up to 180 days of storage, due to the seed dormancy breaking, with a subsequent decrease of the values, while those stored under the conventional system showed a linear decrease of germination throughout the storage. The hermetic system provided an increase in seed vigor up to 120 days of storage and, after this period, there was a reduction of the values. The conventional system promoted a linear reduction of seed vigor throughout the storage, except for the results obtained in the tests of first germination count and germination speed index, which showed an increase up to 60 days of storage. Harvest delay negatively influenced seed germination and vigor, regardless of time and storage system. The combination of harvest anticipation and hermetic storage improves the physiological performance of seeds over time.

It is known that the nutritional and technological aspects of wheat flour depend on the cultivation, harvesting, drying and storage conditions of the wheat grains used as raw material. This research aimed at analyzing the technological quality of samples of national and imported wheat grains, as well as of flour samples obtained from them. For this, physical-chemical (moisture, wet gluten, mineral content, falling number, hectoliter weight) and farinographic (water absorption, development time, stability) analyses were carried out. Physical-chemical analyses showed significant differences (p < 0.05) in the mineral content, wet gluten and falling number of the imported and national grain samples, and also among the flour samples obtained from them. Moisture was the only physical-chemical parameter that did not present a significant difference (p < 0.05) among the national and imported samples. Imported wheat grains and their flours presented higher values for wet gluten (28.0-33.4 %) and falling number (322.33-428.33 seconds), when compared to the national samples. Farinographic analyses showed a significant difference (p < 0.05) in water absorption, development time and stability among the national and imported wheat flour samples. Moreover, the farinographic analyses presented noteworthy values for water absorption (54.43-59.30 %) and stability (10.0-24.75 minutes) for the imported wheat flours. These results showed a lower technological quality of the national wheat grains and flours studied, when compared to the imported samples, with a negative interference in their industrial use and economic value. RESUMO -Não há conhecimento específico para sementes florestais quanto aos processos metabólicos envolvidos durante o armazenamento, o que dificulta o estabelecimento de técnicas para sua conservação adequada. Assim, o objetivo do presente trabalho foi estudar a participação de enzimas do estresse oxidativo e metabolismo de lipídios durante o armazenamento ou envelhecimento acelerado. Sementes de brauna (Melanoxylon brauna -Leguminosae-Caesalpinoideae) foram envelhecidas naturalmente durante o armazenamento por 0, 3, 6, 9 e 12 meses em câmara fria e artificialmente (envelhecimento acelerado) durante 0, 24, 48, 72 e 96 horas, com objetivo de avaliar alterações na atividade das enzimas superóxido dismutase e catalase e nos teores de lipídios. Para isso, foram realizados testes de germinação, avaliadas a atividade enzimática e quantificados os teores de lipídios no eixo embrionário e nos cotilédones. O envelhecimento natural e acelerado afetou de forma semelhante o comportamento das sementes de brauna, promovendo redução do vigor. Embora os efeitos dos dois tipos de envelhecimento afetassem igualmente a germinação, o envelhecimento artificial a 45 ºC por 72 horas simula adequadamente o comportamento enzimático manifestado pelas sementes armazenadas por 12 meses em câmara fria. Houve semelhante redução gradativa das reservas de lipídios em ambos os sistemas de envelhecimento, mas sem correlação entre o armazenamento natural e o envelhecimento acelerado.Termos para indexação: lipídio, estresse, armazenamento, sementes florestais, enzimas. The object of the present research was to study the role of oxidative stress enzymes and fat metabolism during storage and artificial ageing. Seeds of Melanoxylon brauna -LeguminosaeCaesalpinodeae (brauna) were naturally aged during storage for 0, 3, 6, 9 and 12 months in a cold chamber, and artificially aged (accelerated ageing) during 0, 24, 48, 72 and 96 hours, in order to evaluate the changes in the activity of the enzymes superoxide dismutase and catalase and also the oil content. Germination tests were made and the enzymatic activity and quantification of fat content were measured in the embryonary axis and cotyledons.
