The goal of the present study was to determine, through full 2 3 factorial design, the optimum process conditions to develop a biodegradable film, made from gelatin with buriti oil (BO) as additive, characterizing their physical, mechanical, and antioxidant aspects. The conditions for the optimization were 2.3% of fish gelatin, 30% of BO, and 13.18% of plasticizer. The films produced under this condition presented high antioxidant activity (24.77 µmol de TE/g), mechanical resistance (8.04 MPa), and satisfactory water vapor permeability (WVP; 0.38 × 10 −10 g.m. m −2 . s −1 . Pa −1 ). The film presented low solubility in water, low humidity, and low water activity, contributing to its integrity, without identifiable flaws. The increase in the concentration of BO provided higher antioxidant properties to the films and the reduction in gelatin and glycerol concentrations provided lower WVP, increasing the traction resistance.Desarrollo y optimización de una película compuesta hecha de gelatina de pescado biodegradable con aceite de burití añadido RESUMEN A través de un diseño factorial completo de 2 3 , el presente estudio se propuso determinar las condiciones óptimas para desarrollar una película biodegradable, hecha de gelatina con aceite de burití añadido, y caracterizar sus aspectos físicos, mecánicos y antioxidantes. Se pudo constatar que las condiciones óptimas para este proceso incluyen el uso de 2.3% de gelatina de pescado, 30% de aceite de burití y 13.18% de plastificante. Las películas producidas bajo estas condiciones presentan elevada actividad antioxidante (24.77 µmol de TE/g), resistencia mecánica (8.04 MPa) y WVP satisfactoria (0.38 × 10 −10 g.m. m −2 . s −1 . Pa −1 ). Además, la película mostró tener baja solubilidad en el agua, baja humedad y baja actividad en agua, lo cual contribuye a mantener su integridad, sin que se presenten defectos identificables. Al elevarse la concentración de aceite de burití, las películas acusaron propiedades antioxidantes más elevadas. Una reducción de las concentraciones de gelatina y glicerol produjo una permeabilidad más baja al vapor de agua, aumentando la resistencia a la tracción. ARTICLE HISTORY

Wound is the breakdown of the structure and normal functions of the integument and its healing process. The wound healing process is common to all tissues and is characterized by three stages: inflammation, proliferation (fibroblast phase) and remodelling. Many substances are used to improve and accelerate this process. A polymer that comes to the attention of researchers is chitosan, which is obtained by the deacetylation of chitin. Another substance that shows good results in the healing process is buriti oil, extracted mainly from the fruit bulb of Mauritia flexuosa L. The main objective of this study is to demonstrate through bibliographical research the effects of chitosan and buriti oil on healing, as well as describing the process of obtaining chitosan and buriti oil and characterizing chitosan and buriti oil. This is an exploratory study where the bibliographical review was used as technical procedure. For the elaboration of the study, we used scientific materials already published, consisting mainly of theses, dissertations, books, articles of scientific journals and annals of scientific congresses, observing the temporal limits between 2000 and 2016. A potential use of chitosan and oil of buriti in the healing of cutaneous wounds since they presented good results in all the phases of tissue repair. Chitosan has been characterized as being biodegradable, biocompatible has free amine groups thus becoming well reactive, the oil has an orange-coloured liquid, rich in carotenoids (β-carotene), α-tocopherol (vitamin E) And fatty acids. It is expected that this study can serve as a reference for studies on these substances, as well as that they can be used together in order to potentiate their effects on the healing process.

-The present study aimed to process buriti fruits by dehydration and spraying and to evaluate their shelf-life in polyethylene plastic packaging at different storage temperatures. The edible part of the fruit was dehydrated, crushed and sieved for granule diameter standardization, packaged in polyethylene plastic packaging and stored at different temperatures 24°c (ambient), 4°c (cooling) and -12°c (Freezer). Fresh and dehydrated fruits were analyzed for moisture, ph, acidity, total and reducing sugars, proteins, lipids, ashes, carbohydrates, energy, β-carotene and retinol equivalent. Dehydrated and sprayed buriti was analyzed every 30 days for 150 days of storage for peroxide, acid and iodine indexes and also for microbiological parameters. The constituents that stood out both in fresh and dehydrated and sprayed fruits were: lipids, carbohydrates and consequently, energy and β-carotene. In relation to shelf-life, all treatments presented good chemical and microbiological stability during the 150 days of storage period. It was concluded that dehydrated and sprayed buriti remained with good chemical and microbiological stability for at least 150 days of storage at temperatures of 4°c and -12°c. It is suggested that this product can be used as an ingredient in formulated foods aimed at supplementation of pro-vitamin a. Index terms: arecaceae; amazon fruits; Shelf-life; Dehydrated products. DESIDRATAÇÃO E PULVERIZAÇÃO DE POLPA DE BURITI (Mauritia flexuosa L.): AVALIAÇÃO DA VIDA DE PRATELEIRARESUMO -O presente estudo teve como objetivo processar frutos de buriti por desidratação e pulverização e avaliar sua vida de prateleira em embalagens de plástico polietileno em diferentes temperaturas de armazenagem. a parte comestível do fruto foi desidratada, triturada e passada em tamisador para a padronização do diâmetro dos grânulos, embalada em embalagens (plástico polietileno) e armazenada em diferentes temperaturas: 24 °C (ambiente), 4 °C (refrigeração) e -12 °C (freezer). Os frutos in natura e desidratados foram analisados quanto a umidade, pH, acidez, açúcares totais e redutores, proteínas, lipídios, cinzas, carboidratos, energia, β-caroteno e equivalente de retinol. O buriti desidratado e pulverizado foi analisado a cada 30 dias, durante 150 dias de armazenagem quanto aos índices de peróxido, de acidez e de iodo e também quanto aos parâmetros microbiológicos. Os constituintes que se destacaram, tanto no fruto in natura quanto no desidratado e pulverizado, foram: lipídios, carboidratos e, consequentemente, energia e β-caroteno. Em relação à vida-de-prateleira, todos os tratamentos apresentaram boa estabilidade química e microbiológica durante os 150 dias de armazenamento. Conclui-se que o buriti desidratado e pulverizado manteve-se com boa estabilidade química e microbiológica por, no mínimo, 150 dias de armazenamento, nas temperaturas de 4 °C e -12 °C.
