Fish survival at early life stages depends on the temporal and spatial overlap with prey resources, following the match-mismatch hypothesis (Cushing, 1990). In temperate ecosystems, variability in physical and biological features such as the onset of stratification, light availability and the occurrence of phytoplankton blooms affects the seasonal and spatial patterns of zooplankton abundance, which further influences the feeding success of planktivorous fish. Adequate feeding translates into energy reserves stored within individuals, which reflect their well-being or physiological condition to accomplish essential biological processes such as growth and reproduction

Demersal fisheries are one of the top anthropic stressors in marine environments. In the long term, some species are more vulnerable to fishery impacts than others, which can lead to permanent changes on the food web. The trophic relationships between predator and prey constitute the food web and it represents a network of the energy channels in an ecosystem. In turn, the network structure influences ecosystem diversity and stability.The first aim of this study was to describe for the first time the food web of the San Jorge Gulf (Patagonia Argentina) with high resolution, i.e. to the species level when information is available. The San Jorge Gulf was subject to intense fisheries thus our second aim is to analyse the food web structure with and without fishery to evaluate if the bottom-trawl industrial fishery altered the network structure and stability. We used several network metrics like: mean trophic level, omnivory, modularity and quasi-sign stability. We included these metrics because they are related to stability and can be evaluated using predator diets that can weight the links between predators and prey. The network presented 165 species organized in five trophic levels. The inclusion of a fishery node adds 71 new trophic links. All weighted and unweighted metrics showed differences between the two networks, reflecting a decrease in stability when fishery was included in the system. Thus, our results suggested a probable change of state of the system. The observed changes in species abundances since the fishery was established, could represent the state change predicted by network analysis. Our results show how changes in the stability of food webs can be used to evaluate the impacts of human activity on ecosystems.

The influence of salting procedures on the proximate analysis, mechanical parameters, and color of hake ( Merluccius hubbsi ) was investigated. Three procedures were comparatively evaluated: dry salting (DS), mixed salting (MS) and brining (BS). MS samples had the highest fat content, a considerable protein content and an equilibrium salt content similar to BS. MS samples had a great water loss, as DS method, but hardness and other mechanical parameters were similar to that obtained with BS, i.e. significantly lower than DS. All samples showed color parameters significantly different as compared to fresh hake, turning more red-orange as the salting time increased. Lightness diminished, a∗ values increased and b∗ values did not show a clear trend throughout the salting time. Principal component analysis (PCA) described the relationship between some variables (z NaCl , color, and mechanical parameters) with salting time. High Pearson's correlation coefficients were found between z NaCl and hardness, springiness, cohesiveness and a∗ parameter (r = 0.76, p < 0.001; r = 0.93, p < 0.0001; r = 0.95, p < 0.001 and r = 0.93, p < 0.0001, respectively). Luminosity was negatively correlated with z NaCl (r = -0.87, p = 0.0001). The correlation curves showed nonlinear relationships (R 2 adj between 83.7 % and 97.4 %), which could be used to predict quality attributes of hake fillets as a function of salting time. This work contributed to know the effect of different salting procedures on the quality attributes of a species widely available in the Southwest Atlantic Ocean.
