Application of Computational Fluid Dynamics (CFD) Simulation for the Effective Design of Food 3D Printing (A Review)

Abstract: The progress of food 3D printing (3DP) applications demands a full understanding of the printing behavior of food materials. Computational fluid dynamics (CFD) simulation can help determine the optimum processing conditions for food 3DP such as layer height, deposit thickness, volume flow rate, and nozzle shape and diameter under varied material properties. This paper mainly discusses the application of CFD simulation for three core processes associated with 3DP: (1) flow fields in the nozzle during the extrus… Show more

“…CFD refers to computers for building mathematical models to simulate and studying the motion of fluids in a specific geometry with boundary conditions( Oyinloye and Yoon, 2021a , Oyinloye and Yoon, 2021b ). The evaluation criterion is the agreement between numerical simulation results and experimental results performed under specific conditions.…”

“…In 3D printing processes, CFD techniques have been used to explore the effects of material formulation and printing parameters on the extrusion behavior to predict the optimal deposition formulation. CFD mainly involves the selection of suitable methods to discretize the simulation of the fluid continuum, which mainly includes finite difference (FD), finite element (FE), and finite volume (FV) ( Oyinloye and Yoon, 2021 ). In meat 3D printing, the finite element method (FEM) is widely used because of its ability to solve problems that involve non-Newtonian fluids and nonlinear flow.…”

“…Nowadays, it is possible to produce many real-time systems with the AM technique. Medicine [ 1 , 2 ], military applications [ 3 , 4 ], robotics [ 5 , 6 , 7 ], architecture [ 8 , 9 ], industrial manufacturing [ 10 ], textiles [ 11 , 12 ], medicine [ 13 , 14 ], aerospace, space [ 15 , 16 ], and food [ 17 , 18 ] are some of these systems. In addition, AM is preferred for fabrication prototypes or mass manufacturing with articulated manufacturing.…”
