“…According to Wang et al, walnut intake improved lipopolysaccharide (LPS)-induced cognitive dysfunction through the regulation of pro-inflammatory mediators, such as NO and prostaglandin E2, and pro-inflammatory cytokines, such as TNF-α, IL-1β, and IL-6 [ 40 ]. Administration of walnut polypeptide maintains the shape of hippocampal CA3 pyramidal neurons through improvement of the cholinergic system and an increase in monoamines neurotransmitters, such as dopamine, norepinephrine, and serotonin [ 41 ]. This cognitive function improvement effect seems to be due to various ellagitannin contained in walnuts.…”

“…The biological activities of walnut include antiatherogenic and antioxidant activity and anti-inammatory and anti-mutagenic properties. 40,41 The health benets of walnut are usually attributed to their chemical composition, which includes polyphenols, avones, polysaccharides, aminophenols, minerals, and so on. [42][43][44] The peptides from walnut protein hydrolysates exhibited very high antioxidant activities and show angiotensin-converting enzyme inhibitor activity.…”

“…Indeed, its solid byproduct (meal) of oil extraction process has an important protein content (around 34% on dry matter basis for rapeseed meal, as example), that is extensively produced every year (408 million tons in world in 2018 ( FAO, 2020 )). Peanut ( Hwang et al., 2001 ; 2010 ; Yu et al., 2012 ; Zheng et al., 2012 ), walnut ( Chen et al., 2012 ; Feng et al., 2019 ; Gu et al., 2015 ; Lv et al., 2017 ; Ren et al., 2018 ) and pine nut ( Liang et al., 2017 ; Yang, Li, et al., 2017 ) are the most documented nuts containing antioxidant BP. Leaves ( e.g.…”
