Antioxidant Capacity and Chemical Profiles of Satureja montana L. Honey: Hotrienol and Syringyl Derivatives as Biomarkers

Abstract: The present study is focused on the antioxidant capacity and chemical profiling of eight Croatian Satureja montana L. honey samples. Among the 20 compounds obtained by headspace solid-phase microextraction (HS-SPME) and identified by GC-FID and GC/MS analyses, hotrienol was predominant (75.9-81.7%). The honey matrix volatile/semivolatile profile was investigated by ultrasonic solvent extraction (USE) followed by GC-FID and GC/MS analyses. The major compounds identified by this latter method were the sinapic-ac… Show more

“…Intensive evidence demonstrates that oxidative stress is intimately involved in age‐related neurodegenerative diseases development . This has led to an accelerated search for antioxidants and cholinesterase inhibitors from different natural sources . However, active polar compounds, such as phenolic compounds, need to be encapsulated, for instance, in liposomes or polymeric nanoparticles in order to cross the blood brain barrier in intact form.…”

“…In comparison to winter savory (S. montana) honey (311.0−465.9 mg GAE / kg; 2.5−5.1 mmol Fe 2+ / kg) total phenols content was higher and antioxidant capacity (FRAP assay) similar. 19 The total phenols and total reducing capacity assessed by FRAP of S. hortensis honey is higher than the levels observed for several unifloral honeys.…”

“…Our research on Satureja montana L. honey 19 revealed also hotrienol as its predominant headspace compound with even three-times higher abundance. Therefore it may be considered characteristic for Satureja spp.…”
