Averrhoa bilimbi L., popularly known as belimbing wuluh, is a common plant used as traditional medicine and cooking ingredients in Indonesia. Averrhoa bilimbi fruit contains many active substances as antibacterial such as tannin, formic acid, flavonoids, saponins, peroxides, and triterpenoids. Streptococcus pyogenes is a pathogenic bacteria that can cause respiratory infections. This study was carried out to investigate the inhibitory activity of Averrhoa bilimbi L. fruit extract at various concentrations on the growth of Streptococcus pyogenes. This study was a true experimental with post test only control design. The inhibitory activity was assessed by the KirbyBauer’s disc diffusion method with four different extract concentrations (20%, 40%, 60%, 80%), 96% EtOH as negative control, and Amoxicillin antibiotic as positif control. The EtOH extract showed the mean diameter of inhibition zone of 20% extract was 11.43 mm (strong), 40% extract was 19.13 mm (strong), 60% extract was 24.58 mm (very strong), 80% extract was 30.99 mm (very strong), and the negative control (96% EtOH) was 0.00 mm. Least Significant Difference test showed there were significant different of inhibition zone in each extract concentrations of Averrhoa bilimbi L. against Streptococcus pyogenes with the strongest inhibitory activity is 80% extract concentration. Teh herbal merupakan produk minuman yang banyak dikonsumsi masyarakat untuk meningkatkan kesehatan. Teh herbal diolah dari berbagai jenis tanaman yang mengandung senyawa bioaktif. Salah satu tanaman yang mengandung senyawa bioaktif adalah belimbing wuluh. Penelitian ini bertujuan untuk mempelajari pengaruh kedua parameter tersebut pada proses pengeringan menggunakan alat tray dryer terhadap penurunan kadar air dan kadar tanin dari seduhan teh herbal. Daun belimbing dikeringkan dengan suhu 65 °C, waktu pengeringan 60, 90, dan 120 menit, serta airflow velocity sebesar 6,8, 9,3, dan 10 km/jam. Penurunan kadar air terbesar yaitu 68 % dan kadar tanin tertinggi yaitu 1,871 ± 0,283 % diperoleh pada airflow velocity 6,8 km/jam dan waktu 120 menit. Hasil penelitian menunjukkan bahwa waktu pengeringan selama 120 menit tidak merusak senyawa bioaktif tanin dan penurunan kadar air pada teh herbal hasil pengeringan dapat meningkatkan kadar tanin yang terekstraksi saat teh herbal diseduh menjadi minuman yang dapat dikonsumsi.

Allergy rhinitis (AR), as reported by the World Allergy Organization (WAO), is one of the highest prevalence allergies affecting 10-30% of all adults and up to 40% of children. In Indonesia, current evidence showed that the prevalence of AR is increasing. Averrhoa bilimbi Linn. fruit (AF), or locally known as belimbing wuluh, has been scientifically proven to treat many diseases due to the abundant of polyphenol content which was shown to have the potential to treat allergies. Therefore, this study was aimed to investigate the anti-allergy potential of AF in vitro. The anti-allergy effect of Averrhoa bilimbi Linn. fruit water extract (AFWE) was examined using RBL-2H3 cells. At first, the cytotoxicity effect of AFWE was determined by WST-8 assay. The release of β-hexosaminidase by RBL-2H3 cells was also measured to evaluate degranulation suppression activity of AFWE. Lastly, calcium assay was employed to investigate the intracellular calcium concentration ([Ca2+]i). Results demonstrated that AFWE does not show any cytotoxicity at any given concentration. In addition, AFWE at 1.25 mg/mL showed sufficient inhibitory effect towards degranulation by RBL-2H3 cells. Moreover, the degranulation-suppressing activity of AFWE was resulted from the inhibition of calcium-dependent signaling pathways. Unfortunately, the properties of active substances from AFWE have not been investigated. To conclude, this study indicated that AFWE has potential as an alternative treatment for allergic diseases.
