Angiotensin-converting enzyme inhibitory activity of milk fermented by wild and industrial Lactococcus lactis strains

Abstract: Angiotensin I-converting enzyme inhibitory (ACEI) activity was evaluated and compared in <3 KDa water-soluble extracts (WSE) isolated from milk fermented by wild and commercial starter culture Lactococcus lactis strains after 48 h of incubation. The highest ACEI activities were found in WSE from milk inoculated with wild L. lactis strains isolated from artisanal dairy products and commercial starter cultures. On the other hand, the lowest ACEI activities were found in WSE from milk inoculated with wild strains… Show more

“…It has been established that yogurt consumption can provide important health benefits, including inhibition of carcinogenesis and mutagenesis, prevention of hypertension, decrease in levels of serum total cholesterol (TC), low density lipoprotein-cholesterol (LDL-C), and triglyceride (TG; Matar et al, 1997;Taranto et al, 2000;Usman and Hosono, 2000;Rodríguez-Figueroa et al, 2010;Ejtahed et al, 2011). Given that mineral intake also improves lipid metabolism and thus reduces the risk of cardiovascular disease (Hines et al, 1985;Kisters et al, 1993;Bakalli et al, 1995;Jenner et al, 2007), the addition of DSW may enhance the health-improving effects of yogurt.…”

“…Food protein‐derived antihypertensive peptides were thought to be safer and could represent as an alternative to antihypertensive drugs . Over the past two decades, the major natural source of angiotensin converting enzyme inhibitory peptides (ACEIPs), such as milk, soybean casein, edible mushroom, whey, and wheat, collagen is another interesting source of ACEIPs with potential clinical use as moderate antihypertensive medicine. Table shows the list of marine collagen peptides with ACEIP properties.…”

“…106,107 It has also been observed that environmental variables can modify the amino-acid conformation of ACEi peptides, altering the affinity of the enzyme for the peptide. 11 Over the last two decades, numerous peptides with ACEi activity have been isolated, identified, and characterized [108][109][110][111][112][113][114][115][116][117][118][119][120][121][122] (Table 3). Among them, the b-caseinderived lactotripeptides Val-Pro-Pro and Ile-Pro-Pro, f (84-86) and f (74)(75)(76), respectively, stand out.…”
